Life is a special occasion!!
Today is National Nachos Day whch honors a popular Mexican dish that can be served as a snack, appetizer or main course . The perfect recipe for nachos includes a huge plate of stacked tortilla chips topped with lots of melted.cheese, salsa, sour cream, jalapeños and guacamole.
Nachos originated in the city of Piedras Negras, Mexico. One night in 1943 the wives of ten U.S.soldiers stationed at Fort Duncan arrived at a restaurant called Victory Club after it had already closed for the evening Restaurant employee Ignaciao Nacho Anaya quickly put together what he had left in the kitchen for the women, and called the dish Nachos Especiales . Word about this tasty treat quickly spread through out Mexio and Texas. Anaya went on to open his own nacho resturant snd his original recipe was printed in St. Anne’s Cookbook 1954.

I don’t have any nacho pictures to share today but I do have a few of my Mexican hat. I call it my party hat and often wear it for my birthday. We used to go to Chi Chi’s restaurant to cslebrate. Now my favorite place is Red Lobster for seafood and that’s what is on the menu for today
Tuna Casserole
serves 10
4 cups whole wheat fusilli or penne pasta or similar
1 onion, finely chopped
2 cans 16 oz solid white tuna, water packed, well drained
2 cans cream of celery soup or cream of mushroom ssup, undiluted
1/2 cup mayonnaise
1 cup milk
1 10 oz can sliced mushrooms, drained
1 tbsp. Mrs Dash seasoning mix
1 tsp. garlic powder
1/2 tsp pepper to taste
1 cup grated cheddar cheese
Grease an 11 by 7 or 13 by 9 inch baking dish with cooking spray
Boil the pasta in a large pot of boiling water until al dente, : drain then transfer to a large bowl.
Add in onion and tuna, toss to combine. In a saucepan heat soup with milk until smooth.Stir in mushrooms, mayonaise, Mrs Dash seasoning, garlic powder, pepper until combined; pour into the bowl and toss to combine.
Transfer mixture to prepared baking dish. Bake about 30 minutes.
Remove from oven then sprinkle with cheese, return oven to melt the cheese.
I’ll be cutting this recipe in half for just me. It makes a lot. Even at that I’m sure I’ll have leftovers for awhile. It’s a favorite of mine and one I’d call comfort food.

I could make an entire meal out of nachos!
Tuna casserole was one of the only things I knew how to make when I first married. I think good things are timeless!
I like the pictures of the party hat being worn!! Too cute! I do like nachos! Like Myra, I could make a meal out of them! Yummy on the tuna casserole. Something I miss dearly but tuna no longer agrees with my tummy so enjoy some for me!
