Decide to be happy today, to live with what is yours – your family, your business, your job, your luck. If you can’t have what you like, maybe you can like what you have.
Just for today, be kind, cheerful, agreeable, responsive, caring, and understanding. Be your best, dress your best, talk softly, and look for the bright side of things. Praise people for what they do and do not criticize them for what they cannot do. If someone does something stupid, forgive and forget. After all, it’s just for one day.
Who knows, it might turn out to be a nice day.

We always have healthy options when it comes to what we eat. I didn't used to have an restrictions but now I do.
You can definitely eat well in Amish country! Your casserole today reminds me of a Slovak soup my family has made on Christmas eve for many generations. It's an acquired taste but I bet you would like it. I know I crave it all year long. The broth is cans of sauerkraut with a can of water for each can for sauerkraut. Smoked sausage goes in whole and it's simmered for at least an hour. Sausage removed, sauerkraut strained over another pot. Sauerkraut discarded (all the flavor will be cooked out into the broth). Add small peeled potatoes, small peeled onions (whole) and mushrooms, boil until potatoes are done. Slice and top with sausage when serving :)
It's been years, but I remember Amish food being so good! Your casserole sounds like something both Tom and I'd enjoy ... but this time I'm going to remember to rinse the sauerkraut. I learned, "No-one ever told me" isn't a good excuse. LOL.
Yum on thay recipe! I don't think I have ever had Wiener Schnitzel. I didn't realize veal was the traditional way to make it. I always thought pork was.
