Today is Linguine Day which is a long narrow type of pasta that most commonly is used in seafood or pesto dish such as linguine with clams.
Linguine means little tongues in Italian, originated in the Liguria region of Italy. Take a moment to image you’re there at on of the local trattorias, taking in the wonderful aromas of good hearty pasta dishes.
To celebrate have a favorite linguine dish for dinner tonight.

As it happens I did have linguine on the menu for this week so I will make it today in celebration. Usually you hear of Fetticinie Alfredo but I made it with Linquine instead.
Skinny Alfredo
1 lb uncooked whole wheat linguine
2 c. milk
1 tbsp flour
1/4 tsp salt
dash of ground black pepper
dash ground red pepper
2 tbsp butter
2 tsp finely chopped garlic
2 oz. lowfat cream cheese
2/3 c. grated parmesan cheese
2 tbsp. chopped parsley
Cook linguine as directed on package, omitting salt. Drain and return to saucepan. Cover to keep warm and set aside
Meanwhile in medium bowl, stir milk, flour, salt, pepper and red pepper with wire whisk until smooth. In a 2 quart saucepan melt butter over medium low heat. Add garlic, cook one minute constantly stirring, With wire whisk, stir in milk mixture in sauce pan. Cook and stir over medium heat 6 to 8 minutes or until mixture thickens and boils.
Stir in cream cheese until melted. Stir in parmesan cheese until melted. Pour over linguinie toss and coat. Sprinkle with parsley.
To make this recipe more meal worthy you can add cooked chicken to the mix.
It got very cold here over night, down in the 40’s, and I had to turn the heat on awhile here this morning to take the chill off in the house. It’s supposed to warm up to 72 today and better yet, we be 77 tomorrow, with sunshine both days. Definitely time to get the sweaters out.
There is no frost on the pumpkin yet, but those days are coming. DD sent some pictures of the wedding I didn’t go to this past weekend, so that’s what todays photos are of. My nephew and his new bride, with my sister and her family. Also my niece and nephew who were also celebrating their anniversary. They make a lovely family.
