Today is Fall Equinox which is the first full day of the fall season, so get ready for changing leaves, cooler weather, and all things autumn. Meteriogically speaking, fall began September 1st, but the fall equinox marks the astronomical start of the season.
The term equinox refers to the time or date the sun crosses the celestial equator, make day and night equal length. There are two equinoxes each year. On September 22nd and March 20th or 21st.Once the fall equinox begins daylight in the Norther Hemisphere continues to gradually diminish until the winter solstice, the shortest day of the year. The opposite occurs in the Southern Hemisphere, where daylight continues to grow longer.
Celebrate with some of your favorite fall activities. Take a drive to view fall foliage , get out into nature or simply take a neighborhood walk to enjoy the crisp air.

The leaves really haven’t started turning much here at all, although you’l see a few here and there. But it sure is cooler and for that reason my recipe for today is
Classic Chicken Soup
Makes 8 servings
2 tbsp extra virinn olive oil
1 c. chopped onion
2 cloves garlic, minced
1 tsp, thyme
1 bay leaf
8 c. chicken broth
2 lbs xhixken breasts, skin removed
2 c, diced cekery
2 c. sliced carrots
2 c. frozen peas
1 /4 tsp salt
1/2 tsp pepper
3 cups cooked whole wheat egg noodles
1/4 c. chopped fresh parsley
Heat oil in a large pot over medium heat. Add onion and garlic and cook stirring occasionally, until softened. Add thyme and bay leaf. Cook stirring for 1 minute.. Add broth and chicken. Cover and increase heat to high to bring to a simmer. Uncover and cook turing chicken occasionally until thickest part reaches 165 degrees. Skim the foam fro the surface as chicken cooks. Transfer chicken to cutting board and shred.
Meanwhile add celery, carrots and peas to the pot. Return to simmer. Cook until vegetable s are tender. Stir in shredded chicken, salt and pepper and noodles and cook until heated through. Remove from heat and stir in parsley
There is nothing like a good bowl of chicken soup to warm you up on a cool day. I’m sure I’ll have enough left over for lunches later on in the week too.
I will be using baby carrots again in the recipe so there will be no need to slice them up. I always get them when they are available. They’re much easier to cook with.
Apple picking season had begun here in Ohio and it’s a favorite fall activity so today’s pictures of DD and her family apple picking a year or so ago.

I can't wait until it's cool enough here for chicken soup, it's the one thing I really miss in the summertime. Nothing like fresh homemade soup! Enjoy Ma :)
I've not had a bowl of good chicken soup in years! While I've never tried making my own, there's no time like the present. It's the most wonderful time of the year!
Happy fall Ma! So cute with the apple picking from before with your daughter and her family! They looked like they were having fun! Yum on the chicken soup. I always like a bowl of it on a cool winter day!
