ON THE BRIGHT SIDE
FOR SATURDAY, SEPTEMBER 26TH, 2020
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is Johnny Appleseed Day which celebrates his birthday . He introduced apple trees to the United States so be sure to incorporate apples into your menu today.
John Chapman, known as Johnny Appleseed, was an American nurseryman traveling west.Throughout his journey he planted apple seeds, creating apple trees in many states such as Pennsyvania, Ohio, Indiana, Illinois and West Virginia. Johnny Appleseed was also known for love for animals and religion, and his preaching. This national holiday is also celebrated on March 11th, which marks the approximate date of his death.
Honor this American legend today by enjoying an apple, a caramel apple, applesauce or apple cider. Bake an apple crisp or apple pie for a delightful dessert. Or you could plant your own apple tree.
If you can’t see the bright side, polish the dull side
THOUGHT FOR TODAY
An Apple a day keeps the doctor away.
Benjamin Franklin
I always have apples on hand here and use them in my cooking often but I also eat them for snacks too. Apple slices diped in caramel sauce are delicious. They are also very good when dipped in peanut butter. When my apples start to get old, I cook them up into appleasauce and use them up that way. I don’t want them to go to waste.
Apple cider is also one of my favorite fall beverages and I try to keep that on hand too. It’s delicious either cold or hot. But for today’s menu, there is no apples, I’m making:
Grilled Steak with Tomatoes and red onions
2 lb. flank or london broil steak
salt and pepper
garlic powder
1 tbsp. extra virgin olive oil
2 tbsp balsamic vinegar
1;3 c. red onion, chopped
3 or 4 tomatoes, chopped, about 3 1/2 cups
1 tbsp. fresh herbs such as basic oregano or parsley
Pierce steak all over with a fork. Season with salt and pepper and garlic powder and set aside about 10 minutes at room temperature. In large bowl combine onions, olive oil, balsamic, salt and pepper. Let onions sit a few minutes to mellow a bit. Combine with tomatoes and fresh herbs.
Heat grill or broiler on high heat. Cook steak about 7 minutes on each side for medium rare or longer to taste. Remove from grill and let rest on a plate for about 5 minutes before slicing.
Slice steak thin on the diagonal, top with tomatoes and serve.
This makes about 8 servings.
If you don’t have an outdoor grill, you can use your broiler or an indoor grill pan
I’m probably going to make some baked sweet potatoes and homemade applesauce to have a long with this in honor of the day. This will be my meal for the weekend. I cook once on Saturday and have it again on Sunday.
I hope you all have a SUPER Saturday!

Almighty and eternal God,
Protect our military
as they discharge their duties
with the shield of your strength,
may the power of your love
enable them to return home in safety
that with all who love them
they may ever praise you for your loving care.
AND bless our Police Officers, Firefighters
and Paramedics and EMT’s
We ask this through Christ our Lord.

GOD BLESS YOU ALL!
ADVICE FOR TODAY
Every thought is a seed. If you plant crab apples, don’t count on harvesting Golden Delicious.

I love all things apple but especially like you said, with caramel sauce - yum! Enjoy your delicious weekend meal :)
I remember singing the Johnny Appleseed song in Girl Scouts!
I can usually take or leave apples, but my mother used to crack me up. She'd eat an apple every night (you know, to stay regular), "Whether I'm hungry or not." When she'd ride the bus up to visit me she always carried one or two in her bag because, "I know Myra won't have any." Now that you mention it, a caramel apple sounds yummy! Happy Saturday!
