Today is V-J DAY which is when it was announced to the world the Japan had surrendered to the Allies, signifying the end of WWII. This historic milestone celebrated today commemorates the date of Japan’s formal surrender aboard the U.S.S Missouri.
Take a moment today to remember those who fought for this victory . It’s estimated that anywhere from 60 to 80 million people lost their lives during WWII on both sides of the war.

I don’t think there is ever a time that any war is good. We all lose more than we gain, when it comes to people. Thankfully we live in a country that has never experienced war on it’s own ground since our own Civil War years ago. Our wars have been fought in other places. Too much sorrow and disaster in my books. We should strive for peace not war whenever possible.
Peace seems so easy but it’s not. It’s something we have to work at to succeed. I pray for peace in our world every day. There is so much unrest and evil in this world. What the world needs now more than ever is pace.
Peace begins with each of us. It starts with you and me. Let’s bring peace in the world and smile at each other.

Lest I forget, here is what is on my menu for today.
Spaghetti Squash and Meatballs
1 3 lb spaghetti squash
2tbsp. water
2 tbsp extra virgin olive oil, divided
1/3 c. chopped parsley, divided
1/2 cup shredded Parmesan cheese
1 1/4 tsp italian seasoning
1/2 tsp onion powder
1/2 tsp salt
1/2 tsp pepper
1 lb lean ground turkey
4 cloves garlic minced
1 28 oz can crushed tomatoes
1/4 to 1/2 tsp crushed red papper
Halve squash lengthwise and scoop out seeds. Place face down in a microwave safe dish; add water. Microwave, uncovered until the flesh can easily be scraped away with a fork. 10 to 15 minutes.
Heat 1 tbsp. oil in large skillet over medium high heat. Scrape the squash flesh into skillet and cook, stirring occasionally until moisture is evaporated and squash begins to brown, 5 to 10 minutes. Stir in parsley. Remove from heat, cover and let stand.
Meanwhile combine remaining parsley, paremesan, Italian seasoning, onion powder, salt and pepper in a bowl. Add turkey gently mix to combine . Using about 2 tablespoons each form into 12 meatballs.
Heat remainng 1 tbsp of oil in a large nonstick skillet over medium high heat. Add meatballs, reduce to medium and cook, turning occasionally until browned all over. Push the meatballs to the side of pan, add garlic and cook. Add tomatoes, crushed red pepper to taste, the remaining of 1/4 tsp. italian seasoning and stir to coat meatballs. Bring to a simmer and cook, stirring occasionally until meatballs are cooked through. 10 to 12 minutes.
Serve sauce and meatballs over squash, sprinkle with 1/4 c. Parmesan cheese.
I cheated and used frozen meatballs instead of making my own making this dish quick and easy.

We sure all need to pray for peace right now. Enjoy that delicious dinner and have a great day!
I think there's a newspaper in the hope chest proclaiming V-J day! (Ya, my dad was a keeper of all things he thought might be valuable some day.) Peace is certainly not easy, but something for which we should always strive. And pray!
