Today is Checkers Day which is also known as Dogs in Politics Day and is not named for the classic game.
On September 23, 1952 vice presidential candidate Rickard Nixon gave a speech to address growing public concern about his use of campaign funds. He assured the public that he had not misused funds, but that he intended to keep one gift, a little dog that the Nixon children named Checkers. The Checker’s speech was a political triumph and the public responded with overwhelming support.
In honor of the day, play a game of checkers !

It’s amazing the different names dogs get, but I don’t have one and I’m not very political at all so what I have to share today is that I got my new menu made for the week ahead so now I can do my shopping list.:
Monday - Smoothered Pork Chops with Broccoli and Mushrooms
Tuesday - Harvest Chicken Casserole
Stuffed Pepper Soup
Thursday - Pumpkin Alfredo
Friday - Kale, Sausage and Pepper Pasta
Weekend - Broccoli, Cheese and Rice Casserole
On the menu for today is:
Sweet Potato, Black Bean and Spinach Quesadilla
12 oz sweet pottatoes, about 2, halved lengthwise
2 tbsp. olive oil
1 cloves garlic finely chopped
1 tsp cumin
1/2 tsp cinnamon
1/4 tsp. cayenne
1 15 oz can black beans rinsed
1 bunch spinach , stems discarder and leaves roughly chopped
4 medium tortillas
6 oz. Montery Jack cheese
Lime wedge for serving
Salsa for serving
Heat broiler. Line a large boiler proof sheet with foil. Place sweet potatoes on plate cut side down and microwave on high until tender 5 to 7 minutes.
Heat oil and garlic just until it starts to sizzle. Stir in cumin, cinnamon and cayenne and cook 30 seconds.
Add the beans and 1/2 c. water and cook, tossing occasionally until heated through. Add spinach and cook, just until beginning to wilt. remove from heat.
Place tortillas on prepared baking sheet. Scoop the sweet potato from skins and spread on one half each tortilla. Top with the bean mixture and cheese. Then fold over the tortillas to cover the filling. Broil until top is golden brown and the cheese is melted. Serve with lime wedges and salsa if desired.
Our temps have warmed up into the upper 70;s here but they are still saying next week will be a chilly one with high’s in the 50’s …maybe 60 if we’re lucky. I best get out and enjoy these beautiful days while they are here. Hope you all are enjoying some nice fall weather too.

Well, I've never played a game of Checkers, but do remember Checkers-the-Cocker Spaniel. I wanted one just like him! Your smothered pork chops and broccoli sounds really good! We always enjoy pork chops, but it's been a long time.
