Today is also National Quacamole Day which honors a favorite party snack. But there is more to quacamole that meets the eye. Guacamole is made from avocados, which are packed with more than twenty vitamins, contain good fats that reduce cholesterol, can fight cancer and can be used as substitute for butter or shortening in baking.
To celebrate you can purchase pre made guacamole at your local supermarket or buy some ripe avocados to make your own. Have no fear, avocado trees produce up to 400 fruits a year so there should be plenty to go around.

This DIL’s birthday is another of my long distance celebrations. The last time I got to see her was at Christmas time when we were there for our family vacation. So I’ll be lighting my birthday candle today and put a card in the mail to wish her a very Happy Day!
There is no guacamole on the menu for today but I do love it and usually purchase premade Wholly Guacamole at the store. It’s a delicious snack and good for us too.
On today’s menu is White Chicken Chili which is perfect for the cooler weather we’ve been having.
Healthy White Chicken Chili
Yields 6 servings
For the chili
1 tbsp olive oil
1 onion, chopped
1 tsp. coriander
1 tsp chili powder
1 can of green peppers or large jalopena pepper seeded and chopped
1 clove garlic
2 15 oz cans Canellini beans, drained and rinsed.
4 cups shredded rotisserie chicken
1 cup whole kernel corn
4 cups chicken broth
1/4 cup cilantro, chopped
As Garnish, Optional
1 ripe avocado cut into small pieces
4 tablespoons sour cream
Heat oil in heavy bottom pan with a lid on medium high heat. Add in onion, ground cumin, coriander and chili powder. Cook stirring frequently until the onion is translucent.
Stir in peppers and garlic. Sautee for 30 seconds.
Add in white beans, shredded chicken, corn, chicken broth, salt and pepper. Give it a stir.
Put lid on and bring it to a boil. Then turn heat down to medium and let simmer about 20 minutes or until slightly thickened.
When ready to serve, divide it amongst the bowls and garnish with cubed avacados or sour cream as desired.
Note: If you want to make crockpot chicken chili you add in onion, spices, garlic, corn, beans and chicken broth in a slow cooker. Then nestle the chicken into the mixture. Put the lid on and cook for 4 t0 6 hours on low or 3 to 4 hours on high. Once cooked all you have to do is take out the cooked chicken, shred it and add it back to the mixture.
If using rotisserie chicken, you can just shred the chicken breasts and add to the chili.
You can also serve with shredded cheedar cheese and tortilla chips .Its also very good with homemade corn bread which is what I’m doing. After all it’s cool enough to turn the oven on.
Today is also the day I plan the menu for next week so that I can make up my grocery list and here is what I have planned
Monday - Pasta with Zucchini and tomatoes
Tuesday - Classic Chicken soup
Wednesday - Sweet Potato, Black Bean and Spinach Quesadilla
Thursday - Roast chicken , Apples and onions
Friday - Fish Tacos with Coleslaw and Chipotle Sauce
Saturday and Sunday - Grilled Steak with Tomatoes and red onions
I’m excited to be trying out so many new recipes and enjoying them all. I make my list on Alexa and then text it to DD who does my shopping for me.

How I wish we'd picked up some avocados at the store ... my spit's spouting (LOL). Guacamole's my first choice, but I also like eating it stuffed with shredded chicken and mayo. I've never tried white chicken chili, but today's nasty weather has me thinking chili season's right around the corner. Thanks for this recipe!
Happy birthday to your DIL! I like guacamole. I know at some Mexican restaurants you can have it made fresh at the table. I have seen it done but never ordered it myself like that. Again your menu is a great one and that chili I am going to make when winter comes here.
