Today is Teddy Bear Day which is the perfect opportunity to celebrate our most loyal childhood companions; The teddy bear dates back to the eery 1900’s and it’s history is closely linked to an American president.
In November 1902 , President Theodore (Teddy) Roosevelt attended a bear hunt in Mississippi. The other members of the hunting party captured a young bear, led it to a tree and offered the shot to the president. When news spread that Roosevelt refused to kill the bear, a political cartoonist named Clifford Barryman depicted the president with th bear in cartoon titled Drawing the line in Mississippi. On the first printing the cartoon bear was a full grown animal, but it was later redrawn as a cuddly cub. The story and the cartoon became famous and toy makers were inspired to create the first Teddy’s Bear. By 1906 the teddy bear craze was in full swing.
Today teddy bears are a staple in any young child’s life. Celebrate this American childhood icon and make sure the kids in you life have a huggable bear today.

The only teddy bear I have is the one shown in the first picture. He comes out with the fall decorations every year and I’ve had him a long time. There used to be a lot of others but they were given away when I downsized before I moved here. I used to have all my children’s stuffed animals that they left behind when they left home.
They loved stuff animals of all kinds and that included teddy bears. We had Winnie the Pooh bears and Care bears of many kinds.
Some were rescued and taken taken to their own homes, others were donated. I didn’t want to have to move them. This house is small and doesn’t have much storage room.
On today’s menu is:
Mini Shepherd Pies
The potato topping is replaced with a squash puree and they are baked in individual ramekins.
Serves 4
2 teaspoons extra virgin olive oil
1/2 cup chopped onion
12 oz lean ground beef
2 tablespoons flour
1 tbsp. tomato paste
1 cup beef broth
6 oz. baby spinach chopped
3/4 tsp salt, divided
1/2 tsp. garlic powder, divided
2 12 oz packages frozen winter squash puree, thawed
1/3 cup finely shredded Parmesan cheese
I wasn’t able to get any winter squash puree so I used pumpkin puree instead. They taste almost the same to me.
Position rack in upper third of oven preheat broiler
Heat oil in large skillet over medium high heat. Add onion and cook stirring until beginning to soften, about 2 minutes. Reduce heat to medium, stir in beef , flour, and tomato paste, and cook stirring until beef is mostly browned. Add broth, scrapping with any browned bits with a wooden spoon. Bring to a boil and cook, stirring occasionally, until broth is the consistency of thick gravy, about 4 minutes. Stir in spinach, 1/4 tsp salt and 1/4 tsp garlic powder, cool until spinach is wilted .Remove from heat.
Place squash in a fine mesh sieve and gently press on it to extract excess liquid. Tranfer to a bowl. Stir in remaining salt and garlic powder. Divide the meat mixture among the 4 ramekins. Top each with about 1/2 cup of squash. Place ramekins on a baking sheet .
Broil until heated through and bubbling around the edges, about 10 minutes, Sprinkle with cheese and brown until it’s melted, about 3 minutes more.
We had lots of rain come down for Labor Day,and today we may get a little more. The temps are in the low 80’s but are to be going down in the 70’s for the coming week. I even saw a couple of days in the 60’s. Fall is definitely here.

Fall is a good time to cuddle up!
It was just a couple years ago that I had my kids take what they wanted from their stuffed animals that I still had. Only my daughter saved a few, the rest were donated. Enjoy those yummy mini Shepard pies and your fall weather :)
I didn't realize this was Teddy Bear day! 'Think there's still time to take pictures and put up a collage of my 'Ancient 3' on Facebook. Tickled pink to read this recipe and realize there's no peas in it! That used to be one of my favorite things, but we're not especially fond of peas.
Such a cute Teddy Bear! We have a few of the kids stiffed animals still. Favorites I can't part with lol. Your recipe again looks so good! I am not sure what ramkins are, I will have to look up the word.
