ON THE BRIGHT SIDE
FOR THURSDAY, SEPTEMBER 3RD, 2020
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is Skyscraper Day which celebrates the birthday of Louis H. Sullivan, the architect credited with the first skyscrapers.
A skyscraper is a tall, continuously habitat building of many stories, usually designed for office and commercial use. There is no official definition of height above which a building may be classified as a skyscraper. One common feature of skyscrapers is having a steel framework that supports curtain walls.
Today skyscrapers are an increasingly common sight where land is expensive, as in the centers of big cities, because they provide a high ration of rentable floor space per area of land. They are built not just fore economy of space, like temples and palaces of the past, skyscrapers are considered symbols of a city’s economic power. Not only do they define the skyline, they help to confine the city’s identity. In some cases, exceptionally tall skyscrapers have been built not out of necessity, but to help define the city’s identity and presence of power as a city.
If you can’t see the bright side, polish the dull side
THOUGHT FOR TODAY
We often think of skyscrapers when we think of cities because modern cities are defined by skyscrapers.
Leonard Joseph
There are not may skyscrapers where I live. It’s a small town, but there are quite a few in Cleveland Ohio, which is not very far away from here. I’ve had the opportunity to go there and see them. The Terminal Tower building in Cleveland is a building that defines it’s skyline.
Today’s pictures are from New York City that were taken by DS#4 and his wife when they visited there. I’ve never been there, but thanks to them, I have a few pictures.
I forgot to put my menu in for next week, which has a touched fall in it, on Wednesday so here it is for you today:
Monday,
Chicken Potpie with Biscuits
Tuesday,
Mini Shepherds Pies
Wednesday,
Sauerkraut and Sausage casserole
Thursday,
Slow Cooker Vegetable Stew
Friday,
Broccoli, Mushroom and Beef Stir Fry
Saturday and Sunday,
Sauteed Pork Chops with Apples
On the menu for today is :
Salmon and Asparagus with Lemon Garlic Butter
1 medium salmon filet, cut in 3 or 4 chunks
2 bunch asparagus, rinsed and trimmed
1 tsp. olive oil
2 tsp. minced garlic
1/2 cup. vegetable broth
1/2 stick butter
1 tbsp. hot sauce, optional
Juice of 1/2 lemon
1 tbsp. minced parsley
crushed red chili pepper flakes
Slices of lemon, for garnish
Season salmon with salt and pepper. Let sit while you prepare asparagus.
Wash and trim the ends of the asparagus, then blanch them in boiling water for 2 to 3 minutes then soak in ice water to stop cooking. This way they will cook faster and evenly in the skillet. You can skip this step if you have very thin asparagus. Drain and set aside.
Heat olive oil in cast iron skillet over medium low heat. Gently cook salmon on both sides until golden brown. Remove fillets from skillet and set aside on a plate.
In the same skillet over medium heat, add minced garlic and then deglaze with vegetable broth. Bring to a simmer. Add butter, lemon juice, hot sauce, and parsley. Give a quick stir to combine.
Add the drained blanched asparagus and toss for 2 minutes to cook it up. Add salmon back to pan and reheat for another minute. Garnich with more parsley, crushed chili pepper, and lemon slices and serve immediately.
You can serve with mashed potatoes or brown rice.
This will last up to 2 days in the refrigerator or can be frozen in air tight containers and stored up to a month.
Note on Spaghetti Squash: I found that my squash skin turned hard and couldn’t peel it away from the squash after cooking it, I scooped the squash out with a fork, so the recipe was different in that respect. . It was very good though and I’ll be making it again. See pictures below
I hope you all have a GREAT day. Happy Thursday!

I can definitely get the fall feel from your menu. Love the photos! Have a great day Ma :)
Great menu for the week Ma! I always read them when I am hungry lol. That spaghetti squash does look good too! I work in a building with 33 floors but work on the 6th floor. Nice pictures from New York!

The first time my parents took me to NYC, I was so in awe of the skyscrapers. Sadly, since 911 I’ve no desire to ever be in one again.
Love this image of your DS#4 and his wife with Lady Liberty!
