Today is National Cherries Jubilee Day which honors a classic flambé dessert made with cherries and brandy, served over vanilla ice cream.
The original recipe attributed to French Chef Augste Escoffee who prepared the dish for one of Queen Victoria’s jublieee celebrations. It’s unclear whether it first appeared at the Golden Jublieee of 1887 or the diamond jubilee of 1897, but it quickly became one of the most fashionable desserts of the era. For many years, cherries jubilee was s standard minu item at America’s finest restaurants, reaching its peak of popularity in the 1950’s and ’60’s.

There’s no diet list I’ll follow that would rule out a cherry pie.

I do happen to have some vanilla ice cream and some leftover cherry pie filling so I suppose I could make my own version of this dessert today.
But on the menu is:
Roast chicken , Apples and onions
6 cloves garlic
2 small apples
1 bulb fennel
1 lemon
2 springs fresh rosemary
1 small onion
3 tbsp. olive oil
salt and pepper to taste
4 chicken legs
Heat oven to 425 degrees. On a large rimmed baking sheet toss garlic apples onions, lemon and rosemary with 2 tbsp oil.and salt and pepper. Transfer half to a 2nd large rimmed baking sheet and roast vegetables for 10 minutes.
Rub the chicken with remaining tbsp. oil and season with salt and pepper. Nestle chicken among the vegetables and roast 15 minutes. Switch positions of the baking sheets and roast until chicken is cooked through and vegetables are golden brown and tender.
They didn’t have fresh fennel at the store so I’m simply chopped up a stalk of celery and used that instead. I could have used fennel seeds for the aroma and flavor, but wasn’t sure about that taste in my chicken. Fennel tastes like licorice.

I like that recipe Ma. I would substitute chicken breasts for the legs and maybe cook it a bit longer. I don't think I have ever had cherry jubilee but it looks delicious.

Your chicken recipe sounds good! I don't think I've ever tried cherry jubilee, but it looks yummy :)
That cherries jubilee looks elegant! Chicken legs are Tom's favorite part, so I may try making this in the air fryer. Now that you mention it, I don't recall ever having tasted fennel. I do love licorice, tho. Hmmmm.
