ON THE BRIGHT SIDE
FOR THURSDAY, SEPTEMBER 10TH, 2020
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.
12 DAYS UNTIL FALL

Life is a special occasion!!

Today is TV Dinner Day which is a celebration of the historic TV Dinner introduced back in 1953 by C.A. Swanson and Sons that changed prepackaged meal industry forever. The Smithsonian institute inducted the original TV Dinner tray into the Museum of American History in 1986.
The term TV Dinner is now synonymous with any prepackaged, frozen meal that requires little preparation and contains an entire single serving meal. Modern Day TV dinners can be cooked in the microwave instead of the oven and have gourmet recipes as well organic and vegetarian dishes.
To celebrate stop by your local supermarket and pick up some old fashioned TV dinners for your family.
If you can’t see the bright side, polish the dull side
THOUGHT FOR TODAY
There is no sincerer love than the love of food.
George Bernard Shaw
I am old enough that I remember when TV dinners came out. We tried them out, but didn’t have them often. I don’t buy many TV Dinners, although they do provide some healthy options now a days , I do sometimes make my own with the leftovers I have and put them in the freezer. Then all I have to do is heat them up for a meal later on.
I often eat dinner in front of the TV. The evening news usually accompanies me while I eat. With that a TV Dinner tray is also needed to put the food on. I have one right beside my chair.
For Today’’s dinner I’ll be having:
Slow Cooker Vegetable Stew
1 28 oz can crushed tomatoes
1 15 oz can whole plum tomatoes
1 15 oz. can cannelloni beans, rinsed
1 1/2 c. cut Italian green beans
12 oz. baby yellow potatoes
1 c. chopped onion
2 tsp. oregano
1 tsp. salt
1/2 tsp ground pepper
1/2 tsp crushed red pepper flakes
1 c. chicken broth or vegetable broth
1 tbsp. extra virgin olive oil
1 clove garlic, minced
Parmesan cheese for garnish
Garlic Croutons
Place tomatoes and their juice in a slow cooker and crush them with your potato masher.. Add cannelloni beans, green beans, potatoes, onion, oregano, salt, pepper and crushed red pepper. Stir in broth and cover. Cook on low for 8 hours or on High for 4 hours.
You can make your own croutons if desired . About 30 minutes before serving, preheat the oven to 400 degrees. Mash chopped garlic into a paste with a fork and transfer to a medium bowl and stir in 2 tablespoons oil and Italian seasoning. Add bread cubes and toss to coat. Transfer to a baking sheet. Bake until golden, 12 to 15 minutes.
Just before serving, heat 1 tablespoon oil in a small skillet over medium heat. Add minced garlic and cook just until golden. Stir the garlic and oil into the slow cooker. Divide the stew among 6 bowls and top with croutons. Serve with parmesan cheese if desired.
I had some croutons on hand so I didn’t make my own. This will make enough for me to freeze in individual containers for when I need a bowl of soup later on.
I thought I should let you know that the defective freezer I had ordered on line has now been shopped back to the seller, now I’ll just wait to get my refund when they’ve received it. DS#5 helped me do this as it was too big for me to pick up and return. He is such a good son.
I hope you all have a GREAT day. Happy Thursday!

This crockpot stew is delicious and healthy without using any meat.
I sure remember eating those Banquet dinners on a TV tray in front of the television! More often than not, Tom and I do the same ... only our meals have evolved. :) That's such a clever idea about making your own croutons; Tom loves them!
Yep, every Sunday night when I was kid. It was very exciting because we got to eat on the TV trays. I don't think I've had one since back in those days. I make my own like you do. Enjoy your yummy stew tonight :)
That stew sounds delicious! I remember the treat of a TV dinner from growing up. They sure tasted good! Maybe it was the uniqueness of them.
