Today is National Cheese Pizza Day which is a day to celebrate the hundreds of types of pizza and toppings that originated from the classic cheese pizza.
Americans eat approximately 350 slices of pizza per second. Whether you prefer thin crusts, deep dish, or regular style, todays the day to celebrate one of the most popular meals in the country.
In the 1800’s most Italians thought of pizza as a peasant meal. That changed when a baker named Raffaela Esposito created a margarita pizza for visiting royalty. The king and queen were impressed y the colors of the Italian flag represented in the pizza’s white mozzarella cheese, red tomato sauce and green basil. Pizza became fashionable overnight and was soon a staple in restaurants across the country.
To celebrate, head to your favorite pizza place or make your own homemade pizza for dinner tonight. Enjoy!

I think of dieting, then I eat pizza

Sady there is no pizza on the menu for today here at my house, but there is some basil and cheese included in my meal for:
Mozzerarell, Basil and Zucchini Frittata
You can make it for breakfast, or serve for lunch or dinner with a tossed salad and s slice of olive oil drizzled crusty baguette.
Makes 4 servings
2 tbsp extra virgin olive oil
1 1/2 c. thinly sliced red onion
1 1/2 cups chopped zucchini
7 eggs, beaten
1/2 tsp salt
1/4 tsp pepper
1/3 cup grated mozzarella cheese, about 4 oz.
1 tbsp. chopped soft sun-dried tomatoes
1/4 c. fresh basil or 2 tbsp. dried basil
Position rack in upper third of oven preheat broiler. Heat oil in a large cast iron skillet over medium high heat. Add onion and zucchini and cook stirring frequently until soft.
Meanwhile whisk eggs, salt and pepper in a bowl. Pour the eggs over the vegetables in the pan. Cook lifting the edges to allow uncooked eggs from the middle flow underneath, until nearly set. Arrange mozzarella and sun dried tomatoes on top and place the skillet under the broiler until the eggs are slightly browned. Let stand for 3 minutes. Top with basil.
To release the frittata from the pan, run a spatula around the edge, then underneath, until you can slide it or lift it out on to a serving plate. Cut into 4 slices and serve.
This is what I’m cooking for the weekend and can enjoy it reheated on Sunday as well as Saturday.
It’s definitely not pizza but will be enjoyed none the less.

That was a big piece of pizza in the first picture! Pizza is such a good comfort food as well as a family favorite for so many. We have it a lot when the family comes over. Your frittata sounds delicious too!
