ON THE BRIGHT SIDE
FOR SATURDAY, SEPTEMBER 19TH, 2020
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is Octoberfest, which is just the beginning of the German festival that dates all they way back to 1810 in October of that year, the crown prince of Bavaria married the princes of Saxony Hildburghausen, and all the citizens of Munich were invited to attend the royal wedding. The celebration turned in to an annual autumn event.
This year Octoberfest has been cancelled due to the Coronavirus pandaminic. Traditionally over 5 million people travel to Munich to take part in the festivities - making it the world’s largest fair. Over the course of the 16 day festival they will watch parades, participate in massive sing a longs, eat Barvairin foods like soft pretzels, wear traditional lederhosen, and consume more than 1 million gallons of beer.
To celebrate Octoberfest plan your own autumn celebrations, go apple picking or sample some festive apple ciders. Cheers or as the German’s would say, Prost!
If you can’t see the bright side, polish the dull side
THOUGHT FOR TODAY
Most holidays are wrapped up in tradition and are tied to the past. People add special foods and celebrations to make holidays memorable and exciting.
Whitney Stewart
Today is my day to finish up the cake for tomorrow’s festivities and I’ve taken some pictures to show you how I put it together. It’s decorating day today, finishing off the cake. I’m not the best decorator in the world but I’ll try to make it look festive. At least I’ll try.
On the menu for today and the rest of the weekend is
Hearty Beef and Vegetable Stew
Makes 6 servings
2 tbsp. canola oil
2 slices turkey bacon, chopped
1 lb. stew meat
1/8 tsp. salt
1/8 tsp pepper
4 medium carots pealed and cut diagonally into 1 inch pieces
4 stalks celery cut diagonally into 1 inch pieces
2 onions, chopped
3 tbsp. tomato paste
6 plum tomatoes, coarsely chopped
1 cup pomegranate juice
2 tbsp. white vinegar
2 14.1 oz. cans beef broth
3 springs thyme
1 bay leaf
In a 4 quart dutch oven, heat oil over medium high heat. Add bacon; cook until browned, stirring occasionally.
Add beef, sprinkle with salt and pepper. Cook about 8 minutes or until browned.stirring occassionally. Remove meat from Dutch oven; set aside.
Add carrots, celery and onions. Add tomato paste, stirring to coat vegetables, cook 2 minutes then add tomatoes, juice and vinegar. Bring to a boil , scraping up any brown bits on bottom of Dutch oven.
Reduce heat, simmer uncovered for about 5 minus. Add broth, thyme, and bay leaf and the browned beef. Bring to boiling; reduce heat and simmer over heat covered for 45 minutes. Uncover and simmer about 30 minutes more or until thickened and beef and vegetables are tender.
Discard bay leaf . To serve divide stew amongst 6 soup bowls, if desired top with snipped thyme. I’ll be making some biscuits to heave with the stew but if you have a crusty loaf of bread that would do too. I have frozen biscuits in the freezer so won’t have to ma any of my own. Easy peasy.
I had baby carrots on hand so I didn’t slice mine up. You can also use red wine instead of pomegranate juice.
Our weather continues to be cool but sunshine is promised for tomorrow and that is good as the party will be outdoors. Our high is supposed to be around 65 degrees so I’ll definitely have a sweater on.
I hope you all have a SUPER Saturday!
COUNTING MY GIFTS
At the core of folk festivals are a large number of enthusiasts, who actively shape and construct the festival , give it direction and vitality for who it is a significant part of their lives.

Counting at least 3 things every day that I'm thankful for. There is truly is always something to be thankful for.
8477. for festivals and special events to celebrate
8478. for sweaters to keep warm with
8479. for comfort food that warms the tummy
Enter into His courts with thanksgiving — and in His presence is fullness of Joy!
Please pray for God's protection of
our troops and HIS wisdom for their
commanders.
Almighty and eternal God,
Protect our military
as they discharge their duties
with the shield of your strength,
may the power of your love
enable them to return home in safety
that with all who love them
they may ever praise you for your loving care.
AND bless our Police Officers, Firefighters
and Paramedics and EMT’s
We ask this through Christ our Lord.
Amen
GOD BLESS YOU ALL!
ADVICE FOR TODAY
Life is a happy thing, a festival to be enjoyed rather than a drudgery to be endured.

Make as many special occasions in your life as you can. Good times are good for us and get us through the tough times.
Thanks for the little history lesson. My Dad was from German descent but must say I don't know a lot of their traditions as they weren't passed down.
The cake is going to look awesome all decorated. I make one with the same cuts to make an Easter bunny cake. I use one round pan for the face, the part you cut for the center goes under it to make a bow tie and the other 2 are the ears :) Enjoy that yummy beef stew today too!
How clever, that cake design! I'm celebrating temps in the 70's today. It may not last, but brings thoughts of hearty soups and stews to mind. Your recipe sounds so good! I don't have a Dutch Oven, but may try this in the InstantPot.
Thanks for showing us, Ma, how you designed the cake! I like your beef stew recipe. I wouldn't have thought of putting tomato paste into a beef stew so definitely will have to try this out! Does sound like a hearty winter dish!
