Today is National Day of Encouragement which is a day dedicated to uplifting people around us an making a positive impact.
Offering encouragement to someone is free. It never costs anything to say a few words to inspire a student, coworker, or friend. Even a reassuring word to a stranger make make a difference in their lives.
Encouragement lifts up somone when they are down. It always motivates a person who has their eye on a goal. When we’ve failed, the right words remind us to keep trying. A little dedication to finding the right message may create a spark that changes a loved ones perspective.
Sometimes the act of noticing a job well done improves someone’s day. Developing a habit of recognizing emerging talents motivates us to speak up and offer a kind word or helpful tip. It’s a practice worth having to improve relationships at work, home, and in the world around us. There is no simpler way.
To celebrate today make deliberate acts of encouragement. Provide reassurance and inspiration to the people around you. High five someone for a job well done. Take notice when a friend is getting close to a hard earned goal, encouraging them to keep going. Remind them how important they are to you.
If you can’t see the bright side, polish the dull side

I’m very thankful for all the encouragers in my life and can’t say Thank You enough. There were so many times that I got the lift I needed by a few kinds words. Words that got me through many a tough time. I love to be someone else’s cheer leader too. If you have need of a cheerleader , just let me know and I’ll cheer you on. Go Team go! You can do it !
Hard to believe it’ we are ready to celebrate another weekend. Yay! we made it !
Today would have been my Dad’s birthday and it’s also a wedding anniversary for one of my nieces and her hubby. It’s also the wedding day of another nephew and his new wife. I decided not to go, due to the virus, but wish them all the best. I sent a card instead to wish them mich love and happiness.
DD and her family are going to their wedding, as well as to a funeral service for a relative of a cousin in Michigan. I’m praying for the safety of all gathering at both occasions. With safety practices put into place, they should all be fine. I’m just not ready to go out in a crowd like that quite yet. They say that older people are at more risk than others, so I’m staying at home.
It’s my day to cook for the weekend and on the menu is:
Sauteed Pork Chops with Apples
For Sugar and Spice Rub
2 tbsp. brown sugar
2 tsp chili powder
1 1/2 tsp salt
1 1/2 tsp garlic powder
1 1/2 tsp onion powder
1 2/ tsp cumin
1/2 tsp cayenne pepper
3/4 tsp black pepper
For the Chops:
4 center cut chops
2 tsp canola oil plus 1 tbsp., divided
1/4 c. dry white wine, or apple juice
2 c. thinly sliced apples
1/2 cup chicken broth
Thyme, optional
To prepare sugar and spice rub: In a small bowl, stir together brown sugar, chili powder, salt, garlic powder, onion powder, cumin,, cayenne pepper and black pepper.
To prepare the chops. Trim fat from chops. Brush 2 tsp. oil over all sides and sprinkle with 1 tbsp. of the rub, reserve the rest for later use. Rub in with your fingers. Cover with plastic wrap. Chill in refrigerator 1 hour.
Preheat large skillet over medium high heat 2 minutes. Add remaining 1 tbsp. oil. swirl lightly to coat. Add chops; cook 7 to 10 minutes or until 145 degrees on meat thermometer, turing once. Transfer to warm platter. Cover and keep warm.
Remove skillet from heat. Slowly add wine to hot skillet, stirring to scrapes up any bits from bottom of skillet. Return skillet to heat. Add sliced apples and broth and thyme. Bring to boiling, reduce heat. Simmer, covered until apples are tender. Using a slotted spoon, transfer apples to a small bowl. Cover and keep warm. Bring broth mixture in skillet to boiling. Boil about 5 minutes or until liquid is reduced by half . Return chops and apples to skillet, heat through. If desired sprinkle with snipped thyme. Serve immediately
I’ll be having this with some baked sweet potatoes. There will be leftover rub, but I’ll put it in a jar to save for use another time.

I hope you all have a wonderful weekend !
I'm sorry you aren't able to attend the wedding. I have my future daughter in laws bridal show next month and I'm lost with what to do. If it was any other event I would bow out, but how can I not do to this? Unfortunately it's a big event and being held in a public place besides *sigh*
I hope you enjoy your supper tonight, pork chops and apples so so well together. Have a great weekend :)
Great back to school pictures! I have said it before but all your grands are getting so big! It's nice to hear about your nephew's wedding that they decided to have it and not postpone it. Going to try your pork chop recipe soon! I do like to encourage people. It doesn't take a lot of time just to say a few words or send a card or write an email but it can make a world of difference to someone.

What great images of your grands! So cute with the apples. Ya, I totally get your reluctance to go out among large gatherings. As long as I can continue watching Sunday services on-line that's what I'm most comfortable with.
