Today is National Cream Filled Donut Day which is the perfect day to enjoy these sweet treats.
Donuts came to the United States in the mid 1800’s through the Dutch settlers that were known for their pastries. The first donut with a hole in the middle is said to be a creation of American Hansen Gregory. Thankfully, someone after Hansen made the brilliant decision to fill that hole with delicious cream filling ! There were so well liked that the Boston Creme Donut, perhaps one of the most popular cream filled donuts, became the official donut of Massachusetts in 2003

I do love donuts and cream filled ones are a special treat. I don’t have them often anymore but I got some especially in honor of today! I’ll be having one or two to celebrate. I’ve got to say that every now and then it feels very good to spurge and have one of my favorite treats ! I used to have a couple of donuts every day, but I’ve cut back and usually only have them once a week now. It’s probably the best thing I could have done since I managed to loose some weight along the way.
I’ve no donut recipes to share today but I do have some pictures of the Ohio Donut Trail thanks to DS#6 and and family who did the Donut Trail here in Ohio in past years and even got a free t-shirt when they finished it. It’s something I’d love to do but it’s not close by where I live and I’d have to travel quite aways. Probably a good thing becsuse I’d be tempted to over indulge.
On the menu for today is:
Stuffed Acorn Squash
2/3 cups uncooked wild rice
1 tsp olive oil, divided
4 acorn squashes, halved lengthwise and seeded
3/4 tsp. Kosher salt, divided
6 oz. sweet italian sausage links, casings removed
1 cup chopped yellow onion
1/2 cup chopped celery
3 oz fresh mushrooms, chopped
1 tablespoon minced garlic
1 tsp. thyme
6 oz. pkg. fresh spinach
2 tbsp. chopped parsley
1 tbsp. lemon juice
1/2 tsp. black pepper
Cook rice according to package directions. Preheat oven to 425 degrees.
Brush 1/2 tsp. oil over cut sides of squash; top with 1/2 tsp salt.Place squash cut sides down on a parchment paper lined baking sheet. Bake at 425 degrees for 20 minutes or until almost tender. Remove from oven.
Heat remaining 1/2 tsp oil in large skillet over medium heat. Add sausage, cook 3 minutes, stirring to crumble. Add onion and celery and cook 5 minutes. Add mushrooms; cook 4 minutes. Add garlic and thyme, then add spinach stirring until wilted. Remove pan from heat; stir in cooked rice. remaining 1/4 tsp salt, parsley, juice and pepper.
Spoon about 1/2 c. rice mixture into each squash half. Bake at 425 degrees for 10 minutes or until squash halves are tender and lightly browned.
I didn’t have wild rice so I used whole grain brown rice instead. I try to use up what I have on hand. And I only baked 1 acorn squash as it still makes 2 meals for me. 1/2 of one makes a meal as far as I’m concerned.

My leftover cinnamon rolls will have to do in place of donuts for today. Your stuffed acorn squash sounds delicious and a perfect fall meal too - enjoy!
Not making donuts today, but I AM making sugar cookies to take to a meeting in the morning!
No doughnuts here at Casa Guca (*sigh*). But I'm thinking, wouldn't that Donut Trail make an awesome AARP bus tour? No-one would have to worry about falling asleep behind the wheel. :)
I've never tried making acorn squash, but this recipe sounds delicious!
I remember you talking about the Ohio Donut Trail before Ma! It sounds like a fun thing to do! Its good you are allowing yourself the occasional sweet treat! I like your recipe; definitely going to make it sometime soon!
