Today is National Lasagna Day which honors that dish of wide flat pasta shape and possibly one of the oldest . As with most of other types of pasta the word is a plural form. Lasagna means more than one piece of lasagna ribbon. It also refers to a dish made in several layers interspersed with layers of various ingredients.and sauces.
Lasagna originated in Italy in the region of Emilia-Romagna. A traditional lasagna Bolonessi is made of sauce, made with sauce, béchamel and Parmigiano Regigiano. In other regions outside of Italy it is common to find lasagna made with ricatta or mozzarella cheese, tomato sauce and various meats, and miscellaneous vegetables. In all cases they are oven baked. They are typically flavored with wine, garlic, onion and oregano.

I usually make Lasagna for Christmas Eve. It’s become a tradition over the years; And I think the last time I would have made it would have been for Christmas at DS#3’s two years ago and I made a double batch. It’s a dish that makes plenty for a crowd.
I’ve been hearing a lot about people making it with zudhinni instead of pasta noodles so I looked for a recipe to make my own. Zucchini is readily available from gardens this time of year.
No Noodle Zucchini Lasagna
2 large Zucchini , raw
1 tbsp. salt
1 lb. ground beef
1 1/2 tsp. black pepper
1 green bell pepper
1 onion
1 c. canned tomato paste
1 16 oz can tomato sauce
2 tbsp. basil
1 tbsp.oregano
1/4 c water
1 egg
1 15 oz. container ricotta cheese
2 tbsp. parsley
1 16 oz pkg spinache, chopped
1 lb muschroms
8 oz mozzarella cheese
8 oz parmesan cheeses grated
Preheat oven to 325 degrees. Grease a deep 9 by 13 inch baking pan.
Slice zucchini lengthwise into very thin slices. Sprinkle slices lightly with salt. Set aside to drain in colander
To prepare meat sauce, cook and stir ground beef and pepper in large skillet over medium heat for 5 minutes. Add in green pepper and onion, cook and stir until meat is no longer pink. Stir in tomato paste, tomato sauce, basil, and oregano. Adding a small amount of hot water if sauce is too thick. Bring to a boil, reduce heat and simmer sauce for about 20 minutes, stirring frequently.
Meanwhile, stir egg, ricotta and parsley together in a bowl until well combined. To assemble lasagna spread 1/2 meat sauce in to bottom of prepared pan. Then layer 1/2 the zucchini slices, 1/2 the ricotta mixture, all the spinach, followed by all the mushrooms, then 1/2 the mozzarella cheese. Repeat by layering the remaining sauce, zucchini slices, ricotta mixture and mozzarella. Spread Spread the Paremesan cheese evenly over the top and cover with foil.
Bake for 45 minutes. Remove foil. raise oven temperature to 350 degees and bake an additional 15 minus. Let stand for 5 minutes before serving.
This can be assembled a day ahead and refrigerated until ready to bake.

A friend of mine gave me a bag of peaches yesterday. She’d gotten a whole box full of Georgia peaches from a truck that she’d ordered from and shared a few with me. So I suppose I’ll be having peaches for dessert today. They do need to ripen up some so we’ll see.
Today I’m going to make up my grocery list for DD to do my grocery shopping so I tried to make up a menu for the week so I’d know what to get.
Monday - Salmon patties, fresh green beans. 1 baked sweet potato
Tuesday- charred shrimp and pesto bowl.
Wednesday - Sweet Potato soup and 1 slice whole wheat bread toasted
Thursday - Cod with tomato cream sauce, steamed broccoli
Friday - chicken Cauliflower Fried Rice
Saturday - Toaster OvenTostada
Sunday - Skillet Lemon Chicken and Potatoes with Kale
