Today is Oatmeal Cookies Dau which are a cookies that that has been around since the late 1800’s. They originated in England and evolved from the savory oatcake. In the Middle Ages, soldiers carried oatcakes with the in case they needed a quick boost of energy during battle. Although our modern day version is much sweeter, oatcakes and oatmeal cookies shared many of the same ingredients, including spices, nuts and raisins.
Oats are an excellent source of iron and fiber, which explains why oatmeal cookies are the healthiest type of cookie. Make a homemade batch today to celebrate Oatmeal Cookie Day.

Think what a better world it would be if we all, the whole world, had cookies and milk about three o’clock ever afternoon and then lay down on our blankets for a nap.

Eating a cookie and knowing it is healthy too, is a good combination. Out of curiosity I looked up the reipe for old fashioned Oat Cakes so that is what I’m sharking with you today
Oat Cakes
3/4 c. old fashion rolled oats
1 1/2 c. flour
3/4 c. packed light brown sugar
3/4 tsp salt
1/2 tsp black pepper
3/4 c. cold butter cut into small pieces
3 to 4 tbsp. cold water
Preheat oven to 350 degrees. Spread 1/2 c. rolled oats on rimmed baking sheet. and bake until light golden brown and fragrant. 8 to 10 minutes. Cool then transfer to food processor and process until finely ground. Add flour, sugar, salt and pepper. Mix until combined. Add butter and mix until mixture resembles coarse meal, Add 3 tbsp. cold water and mix until dough comes together. Adding up to an additional tbsp. if needed.
Turn dough out onto plastic wrap, shape into a rectangle and wrap in plastic. Chill for 45 minutes. Transfer to a sheet of parchment paper. Sprinkle with remaining 1/4 cup of oats and roll into a 10 by 12 inch rectangle. Using a pastry wheel cut into 32 2 1/2 inch by 1 1/2 inch rectangles. Sprinkle with flaky sea salt. If dough becomes soft, chill for 15 minutes.
Arrange bars an inch a part on two parchment lined baking sheets. Bake until golden. 28 to 30 minutes. Transfer to rack to cool.
It sounds as if these are more like a crispy cracker than a cookie to me.
My St. Patrick’s Day Dinner turned out to be way more than I imagined so today I’m cutting up the brisket into bite size pieces and adding some gravy to the mix for some Irish Stew. It looks like I’ll have pot full . I think I’ll make some biscuits to go with it. There s plenty leftover for several meals.
I don’t happen to have and cookie or stew pictures to share today but I did find some of one of my granddaughter’s enjoying a spring day and they made me smile, hope they make you smile too.

Oatmeal cookies are a great idea and I may make some this week. I love a good cookie with my morning coffee.
Your little granddaughter should be the poster child for Spring! Cookies, milk and a nap sound mighty good right about now.
