Today is National Lemon Chiffon Cake Day. An insurance salesman named Harry Baker invented chiffon cake in the 1920’s . He sold his cakes to the Brown Derby Restaurant in Los Angeles and all of Hollywood fell in love with the dessert’s higher than air texture. Baker carefully guarded the recipe for over twenty years before selling it to General Mills, home of the Betty Crocker brand, for in undisclosed amount.
The recipe for chiffon cake debuted in a 1948 edition of Better Homes an Gardens. General Mills marketed it s the first new cake in 100 yers and it quickly became a nationwide sensation. The secret recipe called for vegetable oil instead of butter or shortening and instead the baker to beat the egg whites and egg yolks seperately.
There are many flavors of chiffon cake including chocolate, orange, walnut, maple and of course lemon, To celebrate today, try being qa delicious chiffon cake for dessert tonight.

Lemon is a great flavor for Spring so I found a recipe to make this delicious cake.
Chiffon Cake
7 eggs, separated, room temperature
2 c, flour
1 1/2 c. sugar
3 tsp. baking powder
1 tsp. salt
3/4 c, water
1/2 c. vegetabele oil
4 tsp.grated lemon Zest
2 tsp. vanilla
1/2 tsp cream of tartar
Frosting:
1/3 c. butter, softened
3 c. confectioners sugar
4 1/2 tsp grated lemon zest
1/4 c lemon juice
Dash salt.
Preheat oven to 325 degrees. Stir flour, baking powder, and salt together twice; place in another large bowl. In small bowl, whisk egg yolks, water, oil, lemon zest and vanilla until smooth. Add flour mixture; beat until well blended.
Add creme of tartar to egg whites; beat on medium speed just until stiff but not dry. Fold a fourth of the whites into batter, then fold in remaining whites. Gently spoon batter into an ungreased tube pan. Cut through batter with a knife to remove air pockets. Bake on lowest oven rack 50 to 55 minutes.. Cook completely in pan. Run a knife around sides and center of tube pan . Remove cake to a serving plate.
In small bowl, combine frosting ingredients, beat until smooth and spread over cake. Enjoy!
I don’t happen to own a tube pan so I always use my bundt cake pan.
It’s the 3rd Siunday now that I’ve not gone to church and I’m missing it. It’s become such a habit for me to go every Sunday that is very disconcerting for me to stay home. At least we have the opportunity to watch on line or on TV but it’s just not the same. I hope when I finally get to go back, I’ll still be seeing all the familiar faces.
So far as I know ,no one I know of has got the virus. Thanks be to God!

Springtime is full of hope, Never give up!
Thanks be to God indeed that no one you know has gotten the virus. Same with me and I an so grateful. I know what you mean about not being in church. I do miss it too but enjoy the messages being streamed. God knows we are being faithful trying to keep in his Word and knows these tough times. That is comforting!
My mom' s favorite cake was a chiffon cake. We had it for everyone's birthday and it was always delicious!

I love lemon … its looks, the way it smells, its taste. Definitely, a Spring-time fruit.
Our church services are being live-streamed, as well. Me being a hugger, surrounded by other (congregant) huggers, I miss worshiping in person. This Easter will feel very odd!
