Today is National Chip and Dip Day which honors Chps and Dip which are the iconic American party Snack. Whether you prefer Tortillia chips, potato chips or corn chips, there are dozens of dips to complete your snack of choice.
Humans have been dipping their food into sweet and savory sauces for centuries. Some of the earliest dips were hummus and olive oil, which originated in the Mediterranean region and are still very popular today. Salsas and dips made with sour cream became popular in the United States in the 1940’s. After the Great Depression many middle class families found themselves without a maid so chips and dips became the go to party dish because it was so simple to prepare.
To celebrate today, have some chips and dip or even a party!

There’s no party going on at my house as no one is coming over, We all have to keep a safe distance from each other. As hard as it is, we can’t visit with anyone. But I can still have my Chips and dip and pretend. I like all kinds of chips, but my favorite is the potato chip and I love it with sour cream and onion dips. It’s easy to fix and has long been used here at my house.
Classic Sour Cream and Onion Dip
1 envelope Onion Soup Mix
1 container, 16 oz. sour cream
Blend all ingredients in medium bowl, chill if desired.
Serve with your favorite dippers.
It’s a new week, another chance to begin again, a fresh slate and a new beginning. We can only wonder what this new week brings after all the happenings last week. We have another chance to get it right, even if everything went wrong last week.
I continue to look at the bright side of life, it’s always there when we take the time to look for it.
I love what DDIL#1 did one day when she took the time to do something she’d hadn’t had time to do before and that was to get out the her lego Christmas train station and put it together. We all have extra time on our hands to do what we usually don’t have time for.
I didn’t cook for the weekend since I had so much corned beef and cabbage, I had my last Rubin sandwich yesterday, so I’m pitching what remaining leftovers I had and am starting new this week. I have some chicken breasts in the freezer so I’m going to make a version of Chicken Paprikash that is much easier than the original recipe because I’m not making my own noodles and skipping parts of the recipe to make it less complicated.
Easy Chicken Paprikash
1 tbsp. butter
1 1/4 lb. boneless skinless chicken breast, halved
1 can condensed Cream of mushroom soup
2 tsp. paprika
1/8 tsp. red pepper
1/3 c. sour cream
4 cups medium egg noodles, cooked and drained., about 6 oz.
Heat the butter in a 10 inch skillet over medium high heat. Add the chicken and cook for 10 minutes or until well browned on both sides.
Stir the soup, paprika and red pepper in the skillet. Heat to a boil and reduce the heat to low. Cover and cook for 5 minutes until the chicken is cooked through.
Stir in the sour cream and cook until the sauce is hot and buqbling . Serve chicken and sauce over noodles. Serves 4 people.
Not my usual way to make this dish at all. But I was looking for somthing simple as I really don’t feel like cooking, but hopefully it will be tasty and worth the little effort I put into it.
If you need to make the sauce creamier just add a little milk. We all have to remember to eat nutritious meals and keep our immune systems up. So I;ll be cooking even though I’d rather be reading.
And hopefully soon I’ll be out walking with my walker, I’ll call her Red, so I can get some exercise and fresh air. Today is supposed to be another rainy day here in Oho. Tomorrow will be partly sunny with 48 degrees they say! Red will help me to walk a little further than my driveway.
I had my first grocery delivery yesterday via DSIL. He dropped off a case of purified water for me and also my dinner . DD had made beans and corn bread and shared some with me. It was delicious. We kept at a safe distance but it was good to see him. The kids have decided I don’t need to go out if I don’t have to so they’ll be dropping my groceries off for a while, but I didn’t expect them to bring dinner too. What a treat!

Smiling about your chips and dip! Potato chips and onion dip are staples in DH's kitchen. :) I love how your kids are pitching in to ensure you don't come to any unnecessary exposure.
While I haven't admitted it until this morning, I realize I've been wasting way too much time 'piddling' here and there on the internet. This would be a great opportunity to work on my memoirs, a little at a time, v. just talking about it.
That was nice how your kids are taking care of you Ma!! All the food sounds so yummy!!
