Today is National Spinach Day which reminds us of the healthy benefits packed into this leafy green vegetable. Not only are there so many delicious ways that you can enjoy spinach but it is also incredibly good for you!
Spinach is an annual plant that grows natively in central and southwestern Asia. Thought to have originated in Persia, Arab tribes carried spinach into India and then later introduced it to ancient China. There it was known as Persian vegetable. The earliest available record of the spinach plant was found in
Chinese saying that the plant was introduced into China via Nepal.
During her reign as queen of France, Catherine de Medici enjoyed spinach so much, it was served at every meal. To this day, dishes made with spinach are known as Forentine, reflecting Catherine’s birth in Florence.
Spinach can be eaten raw or cooked and is available fresh, frozen or canned.It’s one of the best sources iron and an excellent source of calcium, folic acid, fiber, protein, and vitamins A, C, and K. It’s loaded with cancer fighting antioxidants and believed to help improve cardiovascular and gastrointestinal health.
Today enjoy fresh spinach salad, spinach pizza, spinach dip, creamed spinach, Spinach dip, cream spinach, Spinach lasagna, or add spinach to scrambled eggs.

Today’s recipe is for a Spinach Florentine Casserole which is a good dish to have for a Meatless Friday,
Spinach Forentine Casserole
Makes 4 to 6 servings
1 lb spinach
2 c. sliced mushrooms
1/4 c. butter
3 tbsp. flour
2 c. milk
pinch of salt
1/4 tsp. pepper
very generous pinch of nutmeg
8 to 9 ounces penne pasta
1 3/4 c. plain tomato sauce
4 tbsp. basic pesto
2 cloves garlic
1 c. cheddar cheese
Preheat oven to 350 degrees, steam spinach for 3 minutes. Remove spinach from heat and drain as much as possible. Set aside.
Melt the butter in frying pan over medium heat. Add the mushrooms and saute until they begin to pick up some color. Sprinkle flour over mushrooms and still to coat.Cook for a minute or so, then gradually add the milk a bit at a time, stiring to allow the sauce to thicken, between each addition. You want a fairly thick and creamy sauce so you may not need all the milk. Add the cooked spinach and stir through.Stir in nutmeg, salt and pepper. Pour mixture in bottom of 13X 9 baking dish. Meanwhile cook pasta, drain, and return it to the saucepan.Over low heat add the tomato sauce, garlic and pesto. stirring in to mix.
Place pasta layer over the spinach florentine layer in baking dish. Sprinkle cheese on top over pasta layer.Bake for 20 minutes or until cheese is melted and beginning to turn golden brown.
I have frozen spinach so that is what I will use and to make your own basil pesto follow these instructions
Basil Pesto Sauce
2 c. fresh basil leaves or 3 tbsp. dried basil
1 tbsp.lemon juice
2 cloves garlic
2/3 c. olive oil, divided
salt and pepper to taste
1/2 c. grated parmesan cheese
Combine basil and garlic in a food processor and pulse until coarsely chopped. Add 1/2 c. of oil and process until fully incorporated and smooth. Add lemon juice and Season with salt and pepper.Add remaining oil and pulse till smooth Mix in the cheese.
I didn’t have any pesto sauce on hand so had to make my own using the dried basil, but the say fresh basil is best.
Now that schools are closed, everyone has become homeschooled. So that is what the rest of the pictures are today. DDIL#1 posted some pictures of their attempt at homeschooling this week which certainly brought a smile to my face. It was so good to seem them. Our Sweetheart had some occupational therapy to do and DDIL#5 also shared a picture of their group doing an art class. After all Dad is an art teacher.I got out for a walk yesterday and put pictures of that on my blog, What’s New at My House.. The link for that is shown below at the end of this newsletter

I LOVE spinach! As a matter of fact, there's a box of chopped spinach in the freezer. Philly cream cheese, garlic and fresh mushrooms, too. Gonna be an experiment going on over here!

I like spinach myself and can you believe I had never eaten it fresh until last year? It was fantastic! Couldn't really figure out what the grandkids were doing but it looked like they were having fun.
