Today is Popcorn Lovers Day which the special day for popcorn lovers and is celebrated every year on the the second Thursday of March. Popcorn is commonly eaten in movie theaters . This snack is usually served salted or sweetened.. It is traditionally served salted with butter or butter like topping. However sweetened version such as carmel corn and kettle corn are also commonly available.
Popcorn is a kind of corn that expands from the kernel and puffs up with heat. There are many techniques for popping corn. Commercial large scale popcorn machines were invented by Charles Cretors in the late 19th century. Many types of small scale home methods for popping corn also exist, along with prepackaged popcorn.
Depending on how it is prepared and cooked, some consider it to be a health food while others caution against it for a variety of reasons. Air popped is naturally high in dietary fiber, low in calories and fat, and free of sugar or sodium. This can make it an attractive snack to people with dietary restrictions on the intake of calories, fat and/or sodium.

THOUGHT FOR TODAY
I’m a popcorn lover and have it often for a snack. My favorite popcorn is the one sold by the Boy Scouts. It pops perfect every time. And thanks to one of my grandsons I have someone to buy it from. Once a year they have a popcorn sale. Last year I ran out before the sale came around so from now on I’m ordering 2 containers instead of my usual one.
I pop mine in a pan on the stove and that works fine for me. I add one tbsp. of oil to the pan. drop a few kernels in the pan and heat it over a medium flame. When the first kernel pops I add 1/2 c. of popcorn and cover the pan. Turn down the flame, then I cook it, shaking the pan now and then, until it stops popping and then empty the pan full in a bowl and top it off with some melted butter and salt. Makes a perfect bowl of popcorn every time.
Today is supposed to be a mix of sun and clouds so I’m taking advantage of the weather and getting out to run some errands and do some grocery shopping. We’re to be close to 60 degrees and it’ll be a delight to get outside today. We had quite bit of rain the beginning of the week so I stayed in for the most part. Theres’s nothing like some fresh air and sunshine to perk one up!
The grocery ads were in the mail yesterday so I sat down and made a list of what’s on sale and made my list accordingly. I often base my menu for the week with on what’s on sale.I still have a freezer full of meat that I’m trying to wear down by using what I have before buying more, so this trip will include more fresh fruits and vegetables. Although with St. Patrick’s day coming up they do have Fresh Corned Beef on sale, so I suppose I should get that to have on hand. Corned beef and cabbage is a must. 2.99 seems to be the best rate. One store had it for 3.99 a pound, that was the flat cut. so I won’t be going there.I’ll be getting the cheaper point cut that is juicier and has more fat content.
I still have the other half of the chicken wings that I got for Super Bowl Sunday in the freezer so that is what is going to be for dinner tonight. I;ll be making room to add the corned beef to the freezer. This time I’m going to make some oven fried chicken wings.
OVEN FRIED CHICKEN WINGS
Cooking Spray
1 c. grated Parmesan cheese
1 c. seasoned bread crumbs
1/4 tsp. garlic powder
1/8 tsp. onion powder
1/8 tsp black pepper
1 pinch salt
2 1/2 lbs. chicken wings, tips discarded, optional
1/2 c. melted butter
Preheat oven to 400 degrees. Line a baking sheet with aluminum foil and generously spray with cooking spray. Mix Parmesan cheese, bread crumbs, garlic and onion powder, pepper and salt in a bowl. Dip chicken wings in melted butter, press into bread crumb mixture until well coated and arrange on prepared baking sheet.
Bake in oven till golden brown. About 20 minutes Flip wings and continue baking until evenly browned and no longer pink in center and chicken is tender. About 10 minutes more
I don’t discard the tips, but tuck them under the wing folding under to look like a triangle. i don’t like to waste anything and I like the crispy skin with the bread crumbs and parmesan.

We love popcorn (and wings!) so much! How fortunate you've your very own popcorn supplier and can support a worthy cause at the same time. Because I enjoy mine 'nekked' and Tom does the butter/salt on his, we wind up making two microwave bags at a time.
It's a beautiful day in central Alabama; supposed to reach 81*!
PS - $3.99 is what our grocers are getting for their corned beef.
Those wings look good! I too enjoy popcorn as a snack.
