Today is also National Potato Chip day which honors the popular snack, potato chips. Did you know that Americans eat 1.2 billion pounds of potato chips each year. It’s the nation’s favorite snack food.
An American chef named George Crum invented potato chips in Saratoga Springs in 1853. One day a picky customer kept sending his fried potatoes back to the kitchen, complaining that they were too thick and soggy. Crum respond by slicing the potatoes so thin that they couldn’t be eaten with a fork. The customer was so pleased with Crum’s crispy creation they became a regular item on the resturant’s menu.
Today enjoy some of your favorite potato chips with your lunch or dinner.

This DIL’s birthday is another one of those that a card will be going out to in the mail to wish her a Happy Birthday. I did get to see her last weekend so that is good. This weekend everyone is afraid to go out any place. What a difference a week has made here. Now everyone is staying in and Keeping away from crowds. Here we’ve even made the decision to stay home from church tomorrow. Starting Monday our schools will be closed for 3 weeks. Hopefully not for more.
I was going to the library but have decided it’s not worth the trip, but I do still need to get my other kindle fixed so I can read library books on it. I have two. One is a Kindle Fire tablet and the other a Kindle paper white which is better to use outside. It doesn’t reflect the sunlight the way the tablet does.
I’ve so enjoyed having library books to read as I can pick and choose from my favorite authors and I don’t have to pay for the books. With the weather turning warmer and can once again use my sunporch more. First I have to do some cleaning up out there. It hasn’t been used all winter.
I don’t have to cook much for the weekend, I still have left over tuna casserole to finish off, but I’ve decided to make a nice side dish to have with it. So today I’ll be making
Brown Sugar Glazed Carrots
2 lbs. carrots, cut into 1/4 inch slices
1/2 tsp salt
2/3 c brown sugar
1/4 c. butter
2 tsp orange zest
1/2 tsp. salt
Heat 1 inch water to boiling in a 3 qt. saucepan. Add carrots and if desired 1/2 tsp salt. Cove and heat to boiling. reduce heat and simmer covered 12 to 15 minutes until carrots are tender. while carrots are cooking heat brown sugar, butter and orange zest in a small skillet; stirring until sugar is dissolved and mixture is bubbly.
Drain cooked carrots. Stir into brown sugar mixture. cover and cook on low about 5 minutes, stirring occasionally until carrots are glazed and hot. I happened to have baby carrots on hand so that is what I used. Worked out fine. This recipe makes 8 servings.

Happy birthday to your daughter in law!! Wow with the schools closed for 3 weeks! Our church is meeting tomorrow. We will see how many are there. It is good you have your kindle to be able to read books. We were at the store today and it was not too chaotic but empty shelves for some items.

Happy Birthday to your pretty DIL#6! We just returned from lunch with my son and DIL at Cracker Barrel. Uncharacteristically - but understandably - it was only half full. I'd left it up to them and hubby (who has COPD), but everyone wanted to go. Our pastor is strongly suggesting folks with weakened immune systems refrain from attending services -- but come heck-or-high-water, I will be attending Sean's book signing in the afternoon, and hopefully get one of his famous hugs. (Adult crush, much?!)
PS - I never ate carrots as a child, but now I love them!
