Too many times we get to feeling that every thing we do is wrong, so take the opportunity to believe that you are right today. We all need to believe in ourselves, If we don’t , who will? It all starts with us and we need to believe we can do whatever it is that we want. If we don’t think we can, then we can’t. But if you think you can, you will do it. We were all born special and unique with God given gifts that make us who we are. You are special, that’s what, a unique and perfectly made human being created by God .
That makes you very special. Believe it and you can do it!
This week I’d thought I'd cook something new each day with a St. Patrick’s day theme and today I’m cooking up some Corned beef hash using some frozen hash browns. My Corned Beef and cabbage day will be on the 17TH, St. Patrick’s day so I don’t have any leftover corned beef today, so I’ll be using the canned variety for the hash. Wednesday will be some Fried Bacon and Cabbage.Thursday will be leftovers made into an Irish stew and on Friday I’ll make some potato soup.
Corned Beef Hash and Eggs
1 pkg. frozen cubed hash browns
1 1/2 c. chopped onion
1/2 c. vegetable oil
1 can corned beef
Salt and pepper to taste
6 eggs
Heat oil in a large skillet over medium high heat. Sautee onions and potatoes until slightly browned, then stir in corned beef. Season with salt and pepper, cooking for 3to 5 minus. Partially cover skillet, reduce heat to medium low and cook, stirring occasionally for about 20 minutes until potatoes are tender.
Break eggs over hash and cover until eggs have cooked. The steam in the pan will cook the eggs as much or as little as you want.

I'm celebrating St. Patrick's Day all week long...
Great idea, having a week-long St. Paddy's Day theme! Today's recipe sounds yummmmmmmy.
I don't know that what I did in the yard today was particularly right, but Tom thanked me for helping, so that's something! (He knows, yardwork is my least favorite thing in the whole world.)
That sounds like a great recipe Ma! There is a lot we can do and indeed we all have unique talents! We just need to keep trying and keep learning!
