ON THE BRIGHT SIDE
FOR FRIDAY, FEBRUARY 7TH, 2020
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Life is a special occasion!!
Today is National Wear Red Day which is a day to wear red to show support for awareness of heart disease. The causes of heart disease are diverse but atherosclerosis or hypertension are most common. Heart disease is the leading cause of deaths worldwide. Although it usually effects older adults, the antecedents of cardiovascular disease begin in early life. There is therefore increased emphasis on preventing atherosclerosis by modifying risk factors, such as healthy eating and exercise.

I’m wearing red this month or almost every day of it. I have plenty of red clothing, It is my favorite color. The first picture is from yesterday when I went to school for grand friends day and wore a red sweater. And my house is decorated with plenty of red flowers and hearts too.
We need something to cheer us up during these dreary winter days. Our winter weather advisory is supposed to end this afternoon . We’ve certainly had our share of freezing rain causing slippery roads and sidewalks. Thankfully the car is under a roof so at least I didn’t have to scrape any ice off of it.
It’s a good day to fix a simmering pot of soup for the weekend. I’ve chosen an easy Keilbasa and Bean Soup for this weekend. It’s a hearty soup and very good served with cornbread.
Winter Polish Sausage and Beans
makes 6 to 8 servings
1 tbsp. vegetable oil
2 lb Keilbasa sausage
1 tbsp olive oil
2 - 8 oz cans Great Norther beans or other canned white bean
1 c. chicken stock
salt and pepper
1 garlic clove, chopped
8 to 10 cherry tomatoes, halved
1 bunch parsley chopped
Cut the Kielbasa into small slices and chop the garlic. Chop the parsley. Halve the tomatoes.
Heat a heavy pan over medium heat . When the pan is hot add oil and swirl to coat the pan. Add the sausage and sauté until lightly browned. Add the drained beans, the chicken stock, garlic, tomatoes and half the parley to the pan. Season to taste with salt and pepper.
Simmer gently for at least 30 minutes so flavors can meld. About 5 minutes before serving, and the rest of the chopped parsley for a bit of garnish. Serve with slices of cornbread.
I didn’t have any cherry tomatoes, so I added a can of diced tomatoes instead and that made do very well.
I hope you have a FANTASTIC Friday!

Wear red today and support the awarenesses of heart disease.
I don't have much red in my outfits but I'll see if I can find one of hubby's red kerchiefs that he has and tie that around my neck to wear a bit of red today :)
Cute pictures you shared, Ma!
That soup sounds so good! I have never seen a recipe before for kielbasa soup! I'm going to have to make it soon before it starts heating up here with our weather.
I helped myself to a candy on my way out :) The bowl of them looks so delicious!

I'm so glad heart disease is being spotlighted; and give thanks for all the advances modern medicine has made. Given our weather, I opted for a maroon hoodie today-- which (I hope) can be considered a form of red. We love Keilbasa, so that soup sounds appealing. Maybe Tom can just shove the beans aside … or better yet, I can mash them and hope he doesn't ask "What's this?" Hope you're keeping toasty warm!
Red is perfect for today, heart disease.
Your recipe is excellent. Just printed it out.
