Today is Abraham Lincoln’s birthday which honors the 16th President of the United States. Lincoln successfully led the United States through its greatest constitutional, military and moral crisis— the American Civil War- preserving the Union.
Reared in a poor family on the western frontier, Lincoln ws mostly self educated and became a country lawyer. and an Illinois state legislator during the 1830’s and a one term member of the House of Representatives during th 1940’s
He is said to be one of the most popular Presidents in the United States.
If you can’t see the bright side, polish the dull side

Here in Ohio, Lincoln’s birthday is now celebrated as part of President’s Day. He no longer get’s recognition as a public holiday. There used to be a time when it was but it changed when President’s Day came along to include all Presidents.
I know he is one of my favorite Presidents’. He will long be remembered as the Great Emancipator, the Rail Splitter, and Honest Able.
I think we all admire honesty. It’s not found a lot these days when it’s hard to believe what is said. Lincoln was always honest and straightforward.
People need the truth about the world in order to thrive. Honesty is always the best policy.
Here we are midweek and my leftovers from the weekend are long gone so i’t’s time I cooked up something new.
Classic Stuffed Peppers
Makes 6 servigs
1/2 c. uncooked rice
1 onion, chopped
2 tbsp. olive oil
1 tbsp. tomato paste
3 cloves garlic, minced
1 lb ground beef
1 - 14.5 oz can diced tomatoes
1 tsp. oregano
salt and pepper
6 bell peppers, tops and cores removed.
1 c. shredded Montery jack
Freshly chopped parsley for garnish
Preheat oven to 400 degrees. In small saucepan prepare rice according to package instructions . In a large skillet heat oil, Cook onion until soft, 5 minutes. Stir in tomato paste, and garlic and cook until fragrant. Add ground beef and cook, breaking up meat with spoon until no longer pink. Drain fat. Return beef to skilled and stir in cooked rice and diced tomatoes. Season with oregano, salt and pepper. Let simmer about 5 minutes.
Place peppers cut side up in a 9 by 13 inch baking dish and drizzle with oil. Spoon beef mixture into each pepper and top with cheese. Then cover dish with foil.
Bake peppers until they are tender.about 35 minutes. Uncover and bake until cheese is bubbly. 10 minutes more.
Garnish with parsley before serving.
I will serve them with some mashed potatoes and bread and butter. They are on my list of comfort foods. I usually make them in the crockpot but they are also very good done in the oven.
When done in the crockpot I don’t cook the rice or the meat and onions ahead of time. I mix everything together and fill the peppers and let it all cook in the crockpot on high for 6 hours covered in tomato juice.
The librarian at our library’s reference desk was able to get my Kindle all set up to borrow books from the library yesterday, I already have 3 books downloaded. I’ll get 3 weeks to read them and then they will automatically disappear. No more having to remember to return books on time. They return themselves.
We have a winter weather advisory again today. We’ll have a mix of rain and snow with a glaze of ice and possibly 2-4 inches of snow. It’s the freezing rain that causes the problem, making for slippery road conditions, so it’ll be good just to stay in and read books. Take good care everyone.
