Today is National Tortilla Chip day which celebrates the snack food made from corn tortillas , which have been cut into wedges and then fried. Alternatively they may also be discuss pressed out of corn masa then fried or baked . They are the quintessential and often complimentary appetizer in Tex Mex and Mexican restaurants . Although first mass produced in Los Angelas in the 1940’s, tortilla chips were always considered to be a Mexican food known as tostados.
To celebrate today, buy a bag of your favorite tortilla chips and enjoy them with your favorite dip. May your chips be light and crispy and don’t get stuck in your cheese dip.

If we’re not meant to have midnight snacks, why is there a light in the fridge?
I love to snack and these days enjoy my chips with quacamole. Wholley Guacamole comes in individual serving packets in the grocery store. Of course they are always good served with salsa or cheese dip too.
Here is a quick and easy recipe for a dip to make :
Nacho Cheese Sauce
2 Tbsp. butter
2 Tbsp. flour
1 cup milk
7 slices American cheese
1/2 tsp salt
In a medium sauce pan over medium heat, melt butter and stir in flour. Pour in milk and stir until mixture thickens. Stirring constantly constantly mix in cheese and salt. Continue to cook and stir until cheese has melted and all ingredients well blended. If desired, You can add some jalapeños to spice things up a bit.
After a nice sunny Sunday it’s supposed to rain later on today and turn a little cooler. The roller coaster weather continues, but for now we’ll still be close to 40 degrees.So if you have to go out today, take an umbrella.

Appetites have only one word in their vocabulary - MORE. Appetites are never fully and finally satisfied. Ever after the most satisfying meal imaginal, we eventually find ourselves rummaging through the pantry for a snack.

How I LOVE tortilla chips … especially when they bring them to the table all warm. For sure, they're my top Achilles heel. Tom loves his with both cheese dip and salsa, but I'm all about the guacamole. I'm going to look for those individual 'Wholley' packets on our next shopping trip.
