Life is a Special Occasion!

Today is Candy Cane Day which is symbol of tasty festivity that comes with a long tradition. Candy canes have become a part of Christmas itself. According to German folklore, the first candy canes were made in the 17th century when a Choirmaster in Cologne, Germany, needed to find a way to keep the children quiet during the exceptionally long Christmas Eve service.
So he ordered peppermint flavored candy sticks from a local confectioner, but with a few twists of his own He requested the sticks be the shapes of canes the shepherds used when they coming to visit the baby Jesus. Some also say that when turned upside down, the candy cane becomes the letter J, which stands for Jesus. Of course there is no solid evidence for this, but we can enjoy the candy cane with or without any expert knowledge.
Leftover holiday candy canes can be used to decorate cakes and cookies. They can also be used to make some rich mint infused hot chocolate. The possibilities are endless.

THOUGHT FOR TODAY
On the Second day of Christmas my true love gave to me:Two Turtle Doves
My gift to you today is not a recipe for candy canes but for candy that resembles a turtle.
Turtle Candy
12 oz. soft caramels
6 oz. pecans, halved and toasted
8 oz. semisweet chocolate chips
Prepare a cookie sheet by covering it with aluminum foil or parchment paper and spray it with nonstick cooking spray. Arrange pecans in clusters of four with each pecan pointing in a different direction, like turtle legs.
Unwrap caramels and place in a microwave safe bowl and microwave until melted, stirring every 30 seconds. Allow caramel to cool slightly then use a spoon to drop a spoonful of caramel on each pecan cluster.
Melt the chocolate chips in the microwave and spoon the melted chocolate over the caramel layer.
Place the baking sheet of candies in the refrigerator to set for at least 30 minutes. For best taste and texture serve the turtles at room temperature. Extras can be stored in an air tight container at cool room temps for up to two weeks.
This combination of pecans, caramel and chocolate is one of my favorite candies. I’ll be making a batch to have and to share.
It’s the day after Christmas here and all is quiet. After several days of doing little of nothing, I really should straighten up the house a bit and put in a load of laundry. It remains chilly, so it’s a good time to spend some time in the kitchen.

It's time to enjoy all the sweet treats of Christmas...
Ha! I just now posted about candy canes, too! 'Never thought about them being used to distract little children in church … that's a great idea. Probably good for these seasonal hacking coughs, too. Turtle candy used to be a favorite of mine; I've not thought about it in years.
Now I'm going to have to look up the lyrics for 12 Days and try to guess what's up your apron sleeve. (LOL!)
That turtle candy recipe looks good! I thankfully sent home last night with son and family the box of chocolates we got without even tasting one! I knew they would start calling out to me if I kept the box here :)
Hubby did get a candy cane from someone at work. I didn't this year but in years past had given son a box of them to put on the Christmas tree.
