Today is Cookie Day which is for honoring and enjoying the sweet flavor of cookies and sharing them with friends and family. Let this holiday remind you of fond memories of days gone by. Let today be the day you learn to bake new cookie recipe or buy a new cookie cutter.
They can be either delightfully crumbly or sinfully chewy. Cookies are sweet and full of all sorts of delicious goodness from nuts to fruit to chocolate. Not to mention they keep forever if they are stored properly.
To celebrate today, sit down with a tall cold glass of milk or a cup of hot coffee, a large plate of cookies and have no guilt at eating them all up.

I used to bake lots of Christmas cookies and would fill tins of them for not only my family but for sharing too. Cookies do seem to bring back lots of memories to us. I remember a December long ago that carolers came to our house and stood outside singing and afterward, I was very thankful I had cookies to share with them as a way of saying thank you.
These days I do not make many cookies at all, because I get lots of them that my children make. They all have their favorites and usually share them when we have our family gathering in December. There are a few that they don’t make, but that are favorites of mine, so just maybe, I’ll get some baking done too.
I found an easy Christmas cookie to make with festive sprinkles that would make a perfect addition to any holiday cookie platter.
Easy Christmas Shortbread Cookies
Makes 3 to 4 dozen
1 cup, butter, at room temperature
3/4 c. powdered sugar
1/2 tsp. salt.
1/4 tsp vanilla
1/4 tsp. almond extract
2 1/3 c. flour
1/2 c. sprinkles
Add butter, powdered sugar, salt, vanilla, almond extract to a bowl. Mix until smooth. Add flour and mix until it looks crumbly and chunky. Add sprinkles and mix until evenly until fully incorporated.
Turn dough out onto work surface and shape into a ball. Cut ball in half and form each half into an 8 inch log. Tightly wrap each log in plastic wrap and freeze for 30 minutes or refrigerate for at least 4 hours, or up to a week.
Preheat oven to 350 degrees. Line two baking sheets with parchment paper. Remove one log at a time from freezer. Cut dough into 1/4 inch slices. Arrange on lined baking sheet and bake until just barely light golden brown around the edges. About 10 minutes.
Repeat steps with second log. Once cookies are completely cool, store in an airtight container.
I plan to get out and about today and replenish my supply of donuts, and bananas. Two necessities for me. Ha! I really don’t need much in the way of groceries thanks to a well stocked pantry.
We had rain mixed with snow yesterday, but today looks dry with temps around 33 degrees and only a few flurries. I’ll be bundling up and making a quick trip of it and then home again to continue work on my Christmas projects.

Haven't made cookies in years other than the ones you get from the refrigerated case at the store and put them on cookie sheets. Thought of looking for some for this weekend as I think step grand daughter and the wee one will be here on Saturday for dinner. Thought it might be fun to simply make and decorate some cookies that way. Then I can send the cookies home with them and not be tempted :)

I make Fruitcake cookies several times a year and have the cookie dough sitting in the fridge now ready to be baked! My Christmas Tea is tomorrow so I’ll be super busy today making chicken salad croissant sandwiches and preparing meat and cheese trays plus baking cakes and brownies! Then there’s still cleaning and decorating to do! But first, I am happy to get to visit you here! 32 degrees here but it will warm up to the 40’s - perfect tea party weather!
Like Betty, I've not made 'from-scratch' cookies in ages. During our move, I discovered three cookie cutters than belonged to my grandmother, then mother. I toyed with the idea of putting them into ornaments, but I think they're best left as is. They're certainly not fancy, but perhaps one of my grand-daughters would like to have them someday.
