Today is National Fruit Cake Day, which are a delicious treat to enjoy around the holidays. The are also the most popular item for refitting. I whopping 38 percent of people say they give fruitcakes away when they receive them.
Nevertheless fruit cakes have remained popular for thousands of years. The small cakes could withstand long journeys without spoiling and were full of nutritious items like dried fruit and nuts.
To celebrate we can either bake or buy one of these delicious holiday treats!

THOUGHT FOR TODAY
On the Third Day of Christmas my True Love gave to me: Three French Hens
I do love Fruit Cake and haven’t been able to find one in any of the stores here, so I have decided that before the season ends I will be making one for myself. However today is all about hens and here’s a delicious soup recipe to enjoy.
Creamy Chicken Noodle Soup
2 tbsp butter
1 c. chopped onion
1 c. chopped celery
1 tbsp. parsley flakes
2 to 3 c. cooked and diced chicken
1 can cream of chicken soup
1 can cream of mushroom soup
5 c. chicken broth
1 tsp. poultry seasoning
1/4 tsp. Thyme
1/4 tsp. pepper
2 c. frozen peas and carrots
1 1/2 c. heavy cream or half and half
4 oz. cooked noodles, drained
salt to taste
In a large pot over medium heat, melt the butter. Add onion and celery and sauté until onion is tender. Add the parsley, chicken, broth, soups, and seasonings. Bring to a boil and reduce the heat to simmer for 20 minutes.
Add the frozen peas and carrots, cover and simmer for 10 minutes longer. Stir in the cream along with the cook noodles and salt to taste. Heat through.
Serve with crackers or hot baked biscuits, or top with croutons or oyster crackers.
Makes 8 servings
I had a great visit with few of my nephews yesterday at my sister’s house We don’t get to see these boys very often so it was an extra special day. They'd let me know they were going to be in town, so we arranged to meet at my sisters. We had done the same last year and it worked out well.
Today I need to get out for a few things including milk. I really don’t need much at all, but I am making lasagna for our family gathering and don’t have enough noodles to make a double recipe either. Once again we are warmer, in the upper 40’s so it’s a good day to get out.

There is nothing like a bowl of chicken soup for comfort food.

That chicken soup recipe looks delicious especially for a cold winter day! I like that you are bringing lasagna to your family gathering; I bet its delicious! I haven't had fruit cake in yeas but do like it unless it is super dry.

I think I was small the last time I tasted a fruitcake.... and was offput by those pieces of jellied fruit. Perhaps it's time for another taste? Someday. We're experiencing heavy cold rains today -- expected to continue the next 7-8 days, so homemade soup sounds heavenly. In fact, I'm putting on a crock pot of pork and Hatch chili (stew) a little later … and cocoon!
We will be going to the ranch tomorrow and may stop by Collin Street Bakery which is famous for its fruitcakes. I have made a ton of fruitcake cookies, though! You know....I don't even know your name! So from one MA to another - Happy New Year!
