Today is National Fritters Day which celebrates delicious fried cakes filled with fruit or meat. They can be served as a snack, side dish, dessert or the main course.
There actually is not much difference between pancake and fritter batter. They are both made with the same ingredients. It is only once fruit or meat is dipped into the battered then fried that it becomes a fritter.
To celebrate today, try making some tasty fritters to enjoy!

The pictures today are of my attempt to make apple fritters. I’ve already shared the recipe for them. They were very tasty, but didn’t quite puff up as much as I would have liked. They are classified as a snack or dessert. Since I’ve never had a fritter that is filled with meat, I did a search for a recipe to share.
Tasty Chicken Fritters
Makes 12 servings
5 lbs. chicken breasts
2 eggs
1 onion
2 garlic cloves
1/4 c. mayonaise
1 tsp. Mrs Dash seasoning
1 tsp. salt
1/4 tsp. pepper
1/2 c. flour
Olive oil for sautéing
Chopped green onion for garnish
Cut chicken into tiny cubes. Place in a large bowl. Add eggs, shredded onion, crushed garlic, mayonnaise, seasoning, salt and pepper to the chicken. Stir everything together. Add flour and mix again.
Heat a large skillet on medium low heat. Add 2 or 3 tablespoons of olive oil. When oil gets hot, place a scoop of chicken mix in the pan and pat it down to flatten into a fritter. Saute for 5 minutes on each side. Flip over and fry for 5 more minutes. When done place on paper towel to soak up excess oil. Add more oil to pan as necessary and repeat the sautéing process. Garnish with chopped green onion.
I have some leftover chicken breast meat in the freezer so this is one recipe I’ll be using, although I’ll probably be cutting the recipe in half.
I’m a little late getting my post out today as I was away doing some dog sitting but am now back home once again.
The craft sale yesterday was lots of fun and but I didn’t buy much. Many of the vendors were businesses like Avon, Scentsy and such. What few crafts were there were either poor workmanship or way over priced. On the bright side I got to get to spend time with my sister and got a lot of exercise walking around to look at everything.The rain held off most of the morning and that made it nice too.

Does running late count as exercise? If so I got mine today!
Anytime anyone says "fritters", I am there.
I love how you choose to make the best of any situation, Pam! Scentsy was quite the rage for a while there, wasn't it? Because some of those melts have proven toxic - even fatal - to dogs, I won't take the chance having them in our home. Your fritters recipe makes me wish I'd hung onto my old 'Fry Daddy'

LOL about the running late counting as exercise Pam! I am glad that you enjoyed your time with your sister! My sister and I used to do craft shows together and I always really enjoyed this special time we spent together. It didn't matter if we sold anything or not, the time spent and the memories built were priceless! I Love apple fritters and corn fritters. I make some salmon patties that might be seen as fritters also I guess. I serve them with a butter lemon sauce and they are so good! Love and hugs! xoxo
