Today is Chocolate Covered Anything Day which is our opportunity to top everything you eat with chocolate. Indulge in chocolate covered waffles for breakfast, chocolate covered crepes for lunch, chocolate covered pretzels for a snap and chocolate covered strawberries for dessert.
There are many different types of chocolate we can use to top our food: sweetened, unsweetened, bittersweet, semisweet, milk chocolate, white chocolate, dark chocolate, cocoa and more. And in the spirt of the holiday season, share some of these chocolate covered treats with family and friends! Enjoy!

The picture above is me with my newest member of the Rainey family, grand dog, Murray. Yes, I am the result of a lifetime of Chocolate. I enjoy it and eat it often. Ha !
It seems like chocolate holidays are very popular. We just finished celebrating Cocoa and before that I had chocolate covered cherries, so today I looked for something different and this is one of those things I’m definitely going to make and probably going to give away too.
Chocolate Covered Peanut Butter Ritz Sandwiches
Makes 16
2 c. milk chocolate chips
1/2 c. creamy peanut butter
1/4 c. powdered sugar
32 Ritz crackers
Melt chocolate chips. Place peanut butter and sugar into a mixing bowl and whisk until smooth.
Spread a small amount of mixture onto a cracker and sandwich together with another cracker. Repeat until all crackers and filling have been used. Place crackers onto a parchment lined baking sheet and put into freezer for about 30 minutes.
Once the chocolate has melted, using a small pair of tongs, dip the chilled peanut butter sandwiches into the chocolate until completely covered. Shake off any excess chocolate and place back on the parchment lined baking sheet.
Repeat with remaining sandwiches and set aside to dry about one hour. Carefully peel from the parchment and they are ready to serve.
This is the time of year we make things that we usually don’t have. Special treats seem to abound at any party or get together and my family is no exception. They love to eat and are all good cooks too. I love to see what they bring and there is always something different to enjoy.
Today is my usual day to go to church and then spend some relaxing hours just doing nothing. But these Sunday’s leading up to Christmas continue to be busy ones for me. I’ll be off to church, but I have much to do afterwards. They say a Sunday well spent means a week of content, and I’m trying to make the most of today and every day.

I made these peanut butter & crackers covered w/chocolate. There were fabulous! I also sandwiched miniature York patties (or even the knock-offs) instead of peanut butter. those were also awesome.
Loved seeing a picture of you. I love chocolate and try to eat it as much as possible. It is one of my food groups. Merry Christmas Ma!
Peanut butter and chocolate can't be beat, any old day of the week! Your grand-pup Murray is adorable! I just want to reach inside my monitor and hug his neck!
Murray is so cute! I am sure a very welcomed addition to your family!! Chocolate is one of my favorite things to eat! My brother sent his usual 2 pound box of See's candies to us for Christmas. I plan to have a piece or two of my favorites and then send the rest of the box home to son and his family.
