Life is a Special Occasion!

Today is Relaxation Day which is a day to kick back and do nothing. Ahhhh! What a great day.
The stresses, the hustle and bustle seemingly consumes us, every day of the year. Even Sundays are no longer days of rest and relaxation for some. There never seems to be a day to just kick back and relax.
For those us with a hectic lifestyle, Relaxation Day is a day to look forward to. It provides a break from the madness of your busy work and personal schedule. Todays is the day to enjoy either doing absolutely nothing, or partaking in your favorite relaxation activity.
Avoiding stressful activities today is the rule.

Avoiding stressful situations is not always an easy thing to do, but taking a time out is something we all need to do for ourselves. Even if you don’t have a whole day to relax, it’s good to take a break and relax even it it’s only for 5 minutes.
Stress that's left unchecked can contribute to many health problems, such as high blood pressure, heart disease, obesity and diabetes. Stress can also zap your energy, and wreak havoc on your sleep.
One of the best things you can do for yourself and for those around you is to take a break now and then. Slow down and relax.
Today is looking to be a great day here. Once again we are to be in the mid 80’s and the sun is going shine. I got off schedule last week and didn’t get the yard work done until Friday so I don’t need to do that today, but it’s going to be good day to be outside.
The pictures today are from one of the shops I got to visit on our trip last week. I got a lot of good ideas and took pictures till my phone batter was practically dead.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Lemon Meringue Pie Day which celebrates this sweet and tart pie that is made with a shortbread crust. The middle part is made with eggs, grated lemon rind, salt, sugar, lemon juice, water, cornstarch, vanilla extract, and flour. It is then topped with meringue which is basically beaten egg whites and sugar.
Although I love the ones that I find in the freezer section at the grocery store, I found a recipe to share in case you want to make your own.
LEMON MERINGUE PIE
1 Baked Pie Shell
1 1/2 cups sugar
l/3 cup cornstarch
1 1/2 cups water
3 egg yolks, slightly beaten
3 tbsp. butter
1/4 cup lemon juice
1 tbsp. grated lemon rind
3 egg whites
Preheat oven to 400 degrees. Mix sugar and cornstarch in a saucepan. Gradually stir in water. Stir over medium heat until mixture thickens and boils. Boil for 1 minute.
Stir half of hot mixture into the slightly beaten egg yolks, in a thin stream, while whisking constantly. Whisk in the remaining hot mixture. Boil for another minute, stirring constantly.
Remove from heat and continue stirring until smooth. Blend in butter, lemon juice and lemon rind. Pour hot filling into a pre baked pie shell.
Meringue
3 eggs
1/4 tsp. cream of tartar
6 tbsp. sugar
Beat egg whites with cream of tartar until frothy. Add sugar a spoonful at a time, while beating until egg whites hold stiff peaks when the mixer is lifted; the eggs should be glossy still, if you beat too long they will look dull. Using a spatula, spread meringue evenly over top of pie all the way to the edges. Bake for 8 to 10 minutes until top of pie is a delicate brown.

I love the Abe Lincoln quote. I just finished eating a slice of lemon cheese pie. Yummy. So I was close to lemon meringue. Hope you are having a great Tuesday!
Lemon pie sounds mighty good right about now. I don't recall ever having tasted meringue!
Your mention of taking a break (to reduce stress) sent my mind spinning way back to 1988. My supervisor used to say, "Get up and grab your cigarettes; we're going for a walk." She'd lead the way outside and we'd circle the perimeter of the station 2-3 times. 'Not sure if it was the nicotine or exercise, but just stepping away from the stress for a few minutes made such a difference!
