It's National Watermelon Day which celebrates a delicious summer fruit that has become a staple at family picnics and cookouts. Watermelons are 92% water so it’s no wonder they’re so refreshing!
Watermelon is rich in nutrients including vitamins A and C, B vitamins and potassium, but where it really packs a punch is with lycopene, the antioxidant pigment that gives the fruit its deep red color. Some studies suggest that lycopene may have cardiovascular benefits, including reducing the risk of stroke, and eating watermelon may slightly lower blood pressure.
There are around 300 different kinds of watermelon in the U.S. and Mexico. You can find red, pink, white, and yellow varieties in various sizes and shapes. Watermelons are usually quite large, and many county fairs award prizes for the biggest ones. According to the Guinness Book of World Records, the heaviest watermelon weighed 262 pounds.

As you can see by the pictures above I have watermelon on hand here at my house. It’s good for breakfast with my hard boiled eggs, for lunch and dessert too. At this point it’s pretty ripe and this is probably the last day for it.
I’ve been enjoying the fruits of summer and the vegetables too. This is the time of year when the eating is good and good for you too. Fresh from the roadside stands, they are at their best right now. I could only wish our growing time would last longer.
It’s been a quiet week here so far this week. And that is a good thing as it gives me plenty of time to work on those on going projects of mine. There is always plenty to do here between keeping house, and crafting to do. Never a dull moment here for sure.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Grab a Nut Day. These little bountiful nuggets contain wholesome nutrients, have a long shelf life and are quite portable. They add a nice crunch to snacks and desserts as well s savory meals.
Nuts are considered to be a superfood. They’re high in protein and contain monounsaturated fat, which can decrease a person's risk of heart disease and help boost their good cholesterol levels.
Today’s recipe includes nuts and is perfect for this time of year when zucchini is plentiful.
Zucchini Nut Bread
3 eggs
2 cups sugar
1 cup vegetable oil
1 teaspooon vanilla
2 cups coarsely grated zucchini
2 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon salt
1/2 cup chopped walnuts or pecans, optional
Preheat oven to 350 degrees. In the bowl of an electric mixer, beat 3 eggs until frothy. Gradually add 2 cups sugar. Stir in 1 cup vegetable oil and 1 teaspoon of vanilla. Beat until thick and lemon colored. Stir in zucchini.
In a medium bowl, whisk together to combine 2 cups flour, 1 teaspoon cinnamon, 1 teaspoon baking soda, 1/4 teaspoon baking powder and 1 teaspoon salt. Stir dry mixture into wet mixture, stirring to combine. Add chopped walnuts or pecans, if desired.
Spray two bread loaf pans or grease and flour to prevent sticking. Pour batter into pans and level off with the back of a spoon.
Bake for approximately 1 hour or until done.
Allow loaves to cool in pan for 10 minutes, then run a knife along the sides to loosen bread and remove from pans. Cool on wire rack. Brush tops of loaf with melted butter while still warm.

Fresh vegetables are right up there on my Favorite Things list!
... as are nuts! "Grab a nut" ??? I struggle not to eat the whole container in one sitting. LOL.
That bread recipe sounds wonderful to incorporate in my fall baking.
