Today is National Senior Citizens Day which honors our elderly population. On this day, we are encouraged to recognize and show appreciation for the value and contribution of elderly people to home, family and society.
In his Presidential Proclamation, August 19, 1988, President Ronald Reagan said, For all they have achieved throughout life and for all they continue to accomplish, we owe older citizens our thanks and a heartfelt salute. We can best demonstrate our gratitude and esteem by making sure that our communities are good places in which to mature and grow older.
If you are a senior citizen, enjoy your day any way you desire. After all, this is your day! Make sure to take advantage of senior citizens specials and discounts. There's bound to be plenty offers today.

They say that a senior citizen is usually 65 years old or older. I’ve been one for awhile now and am enjoying life in the slow lane to the fullest.
It was not always easy for me to accept the fact that I cannot move as fast as I once did so I try to be thankful for and enjoy the slow lane. One benefit of being a senior is retirement and thankfully it gives me the time to move at a slower pace. I no longer have to rush through my days, I’ve got all the time I need even if I move slower.
I know many seniors that work long after 65 and I applaud their efforts, but I took advantage of my age and retired when I could. I decided that it wasn’t worth it for me to work any longer. I’d probably never make any more than my retirement benefits could possibly offer, so why not.
Thankfully I live simply and have what I need. There is not a lot of room for any extravagance in my life, but happiness does not come from what money can buy. I have what is important and that is my faith, family and friends.
Money cannot buy back the free time I’ve had to spend with my family and friends. It cannot buy the time I’ve had to enjoy what I love to do. Being a senior has made me content with what I have. When your content with being who you are and with what you have, you have everything.
Today is an exciting day with the eclipse happening all across our country. I’ve made up my mind I’ll watch it on TV. I don’t have the special glasses to view it, so I’m not going to try. It can be very dangerous to our eyes without them.
It’s also the start of our county fair today which will be running all week and I see that Thursday will be Senior Citizens day and it’ll be free to get in. These days I tend to go to the fair for the food. There is always something good to eat and they have homemade donuts there too. I usually bring a dozen home. They are just too good to pass up.
The pictures today are from the Sunday paper. I stopped on the way home from church yesterday to pick one up. Lots of interesting reading there and a few smiles too!

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Spumoni Day. Spumoni is an Italian ice cream, originating in Naples, Italy. It was brought to America by immigrants in 1870. While it is enjoyed any day of the year, many people consider it a Christmas time dessert or treat.
Spumoni is made of layers of ice cream, candied fruits, cherries, and nuts. Pistachios are commonly used.
I do love spumoni and the very first time I had it was in an Italian restaurant years ago when DDH and I first started dating. It’s been a favorite dessert ever since.
In honor of this day I found a dessert recipe to share. This is a cake that has all the flavors of Spumoni Ice Cream. Pistachio, Cherry and Chocolate.
Spumoni Cake
1 Box of white cake mix
1 Package of Pistachio pudding and pie filling mix
1/2 cup finely chopped roasted Pistachios
1 tbsp Almond extract
4 large eggs
1 cup water
1/3 cup vegetable oil
Icing:
1 lb Confectioners Sugar
2 oz Chopped dried cherries
1/3 c cherry juice
1 stick of butter, softened
1/4 tsp salt
1/4 cup Semisweet mini chocolate bits
Milk as required for consistency
For the cake mix all ingredients and bake in a 9 by 13 pan that has been buttered and flour coated. Bake at 350 degrees for approximately 35 to 40 minutes. Let cool in pan, turn out on cooling racks. Cool for 2 to 3 hours. Cut the cake into 6 1/2 by 9 inch halves, and again horizontally to make 4 layers.
Icing: Chop the dried cherries into 1/8 inch or so bits, and microwave them briefly in the Cherry juice. Let sit till room temp. Just enough to get them to plump up a bit. Mix all the ingredients. Beat for 2 minutes. Adjust the consistency with more of milk if needed. Ice the cake. Chill in the fridge for an hour or so.

How fun with the fair! I have to get a Sunday paper sometime. Haven't done it in a long time. Hubby will be a senior at his next birthday. He will retire a year later.

I love being a Senior Citizen!
In fact, if I ever were to open my own business, I'd hire ONLY senior citizens. Imagine, no calling in sick (after partying too hard), absent to care for sick children, etc. Plus, I think we've a strong(er) work ethic.
Of course, if one can get away with NOT working ... brava! I can't wait to try. :)
