Today is Sandcastle Day which was created to help us remember just how much enjoyment some sand, water and sunshine can give us. Few childhood memories are looked back upon more fondly than building sandcastles on the beach with the hot sun overhead, the cool water washing over your feet ever now and the fleeting beauty of the castles themselves that disappear the moment the tide comes in…there’s no doubt about it, childhood sandcastle memories are magic.

I do have fond memories of building sand castles on the beach with the babes when they were young. There is lots of fun to be had in the sand, the water and lots of sunshine.
These days my sandcastles are mostly a thing of the past, but that doesn’t mean I don’t appreciate the memories. I still love the beach even though I rarely see one these days.
I’ve seen pictures of ornate castles in the sand that are done by sand artists. There are even contests to see who can build the best one.
Summer is fast fleeting and these August days will soon be over and children will soon be back in school and although fall doesn’t officially begin until September 22nd, when school begins, it seems that summer is over. We need to enjoy the fun in the sun while we have it.
We have had a few rainy days in a row here and that is what the pictures are of. A view from the porch on a rainy day. There have been beach hazard notices advising those that go to the beach to refrain from swimming. Best to pay attention to the advisories that come our way.
No matter what the weather though, we can always make our own sunshine and sandcastles in the air.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Mustard Day which celebrates the King of the Condiments.
Mustard is a must have for hot dogs, sausages, and a wide range of sandwiches. Its an important ingredient in many recipes, too.
When it comes to condiments, Mustard is among the most popular. When it comes to longevity, mustard is unrivaled. It has literally been in use to spice up meals for thousands of years. To retain it's status, mustard has not stood still. Rather, it has diversified. It's not just yellow anymore. There's a growing selection, including Honey Mustard, Bold and Spicy, Sharp and Creamy, and of course Dijon Mustard.
Today I’m sharing a recipe that uses mustard as one of it’s ingredients.
Creamy Potato Salad
1 1/2 pounds round red or white potatoes, about 6 medium, peeled
1 1/2 cups mayonnaise or salad dressing
1 tablespoon white or cider vinegar
1 tablespoon yellow mustard
1 teaspoon salt
1/4 teaspoon pepper
2 medium stalks celery, chopped
1 medium onion, chopped
4 hard cooked eggs, chopped
Paprika, if desired
Place potatoes in 3 quart saucepan; add enough water to cover potatoes. Cover and heat to boiling; reduce heat to low. Cook covered 25 to 30 minutes or until potatoes are tender; drain. Let stand until cool enough to handle. Cut potatoes into cubes.
Mix mayonnaise, vinegar, mustard, salt and pepper in large glass or plastic bowl.
Add potatoes, celery and onion; toss. Stir in eggs. Sprinkle with paprika. Cover and refrigerate at least 4 hours to blend flavors and chill. Store covered in refrigerator.

Kids go back to school here on Monday. Sure went by fast! I too enjoyed making sand castles with the kids when they were young. Can be so creative in making them. We had a big storm here in Thursday; we didn't get anything but other parts of the area had power outages, trees down, etc. Hope your day is a good one!

I am fond of mustard. And, to me, potato salad is not potato salad without mustard. Sure wish I was sitting on a beach building a sandcastle today!
I learned to love mustard only recently ... when my boss shamed me in front of everyone for putting too much mayonnaise on my burger at a company BBQ. Funny, I've not used it since, but I don't suppose anyone noticed. (*smile*)
I used to love making creamy potato salad using both mustard and mayo!
PS - I've never made a sandcastle in my life. Yet!
