ON THE BRIGHT SIDE
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Life is a Special Occasion!
Hallmark
Today is Son and Daughter Day which is the perfect opportunity to set aside some time to reflect on the joy that children bring to your life. Whether sons and daughters are young or old, teenagers or toddlers, the bond between parent and child is like no other on earth and this annual celebration ensures the miracle of bringing new life into the world is never forgotten.
It’s a day to say I love you and I’m very glad you’re mine !
If you can't see the Bright Side, polish the dull side
THOUGHT FOR TODAY
When you look at your life, the greatest happinesses are family happinesses.
Joyce Brothers
Yesterday I did get to spend some quality time with my daughter, my sister and one of her daughters. It was a beautiful day and we shopped till we dropped. I really bought more groceries than anything else. They have such a great variety that we don’t get locally. You’ll see some of my bounty in the picture below. But that was only a tiny bit of what I got. What you could call a mere drop in the bucket for sure. Good thing DD has a truck we pretty much filled the back end up between the 4 of us.
I got lots and lots of pictures and I’ll probably be sharing them with you for the next week or so. There was so much to see that it was hard to get pictures of everything but I did manage to get over 100 to share.
I love all my sons and my daughter and they are a gift to me for sure For the most part, they are my motivation to do whatever I do. I can honestly say I’ve thoroughly enjoyed being a mom. I’m so proud of each and every one of them — they are the best !
Today I’m hoping to get the yard work done but we do have a chance of rain later on. I had my day to goof off so gotta get some work done now.
I hope you all have a FANTASTIC Friday!
WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
National Raspberry Tart Day! The tart is the perfect combination of crispy crust, creamy filling, and fresh fruit. One tasty treat that you usually don’t see in a bakery is a Fry Pie. I got this tasty Black Raspberry and Cream cheese Fry Pie at one of our many stops on our trip in Amish country yesterday. Let me say it was delicious!
I have made my own, but todays is from an Amish bakery. Here’s a recipe in case you might want to try it.
Berry Fry Pies
DOUGH
3 2/3 cups All Purpose Flour
3 tablespoons sugar
2 teaspoons cornstarch
1/2 teaspoon salt
1/4 cup cold butter, diced
1/4 cup Vegetable Shortening
2/3 to 1 cup ice cold water
1/2 teaspoon apple cider vinegar
FILLING
2/3 cup water
1 1/4 cups sugar, divided
1/4 cup cornstarch
2 tablespoons butter
1 tablespoon lemon juice
1 tablespoon vanilla extract
4 cups fresh berries
1 teaspoon ground cinnamon
Vegetable Oil
Dough
Combine flour, sugar, cornstarch and salt in large bowl. Cut butter and shortening into flour mixture, using a pastry blender, until mixture resembles coarse crumbs with some small pea sized pieces remaining.
Add 1/4 cup ice water and vinegar to flour mixture. Stir with fork. Add additional ice water, 1 tablespoon at a time, just until dough holds together firmly when pressed into a ball. Flatten ball into round disk. Wrap dough in plastic wrap. Chill 30 minutes.
Filling
Whisk water, 1 cup sugar and cornstarch in medium saucepan until cornstarch is dissolved. Bring to a boil over medium heat, stirring constantly. Simmer 1 minute, or until mixture thickens, stirring constantly. Remove from heat. Stir in butter, lemon juice and vanilla until butter is melted. Fold in berries. Cool completely.
Heat 1 inch oil in Dutch oven over medium high heat to 350 degrees. Divide dough into 12 equal pieces. Roll each on lightly floured surface into 5 inch circle. Brush edges with water. Spoon 1/4 cup berry mixture onto center of each circle. Fold dough in half to cover filling. Seal edges by pressing with fork.
Cook in batches in hot oil 4 to 5 minutes or until golden brown, turning halfway through cooking time. Drain on paper towels. Stir together cinnamon and remaining 1/4 cup sugar. Sprinkle over fry pies. Cool 10 minutes before serving.

Looked like a fun time!

That Amish pie looks delish. I really need to get off this computer and get busy but I love visiting my friends on Friday!
That fried pie looks amazing. Troy's dad and I used to walk to the 'day-old' bakery in Abilene and buy fried pies for a nickel ... a real treat, given the state of our collegiate expense accounts!
Your day with the girls sounds like such fun! It's been more years than I want to count since I did 'gal time.' Hopefully, next year I'll have the opportunity to rekindle and even cultivate those friendships.
You have good looking women in your family!
Fried pies, sounds good to me!
Love the photo of you, your sister, daughter and niece. What a sweet selfie! Loving the fry pie also. Looks delicious. I adore raspberries. Nice that you had such a lovely time together. Family times are the best of times! Love and hugs, xoxo
