Today is Tell a Fairy Tale Day which is a day that Fairy Tales are made of. Today is a great opportunity to read your kids or if the kids aren't around, its certainly okay to read them alone. Everybody loves a good fairy tale.
To qualify as a fairy tale, a story does not have to begin with 'Once upon a time’, but they usually do. It is a requirement, however that the story has a happy ending. There's nothing better than a good story that ends with 'and they all lived happily ever after’.

Today I’ll be going to our little Lucky Guy’s birthday party which was scheduled for last Saturday and then moved to Sunday. Due to a tummy virus it was then cancelled and moved to this Sunday. I’m thinking the 3rd try will be the charm.
Our weather has turned colder and highs today will probably be about 45 degrees. This is still warm for February and it’s to be sunny later on.
I’ll be praying for all traveling to and from for this celebration. It would be nice if we all lived close by, but not possible so when a special occasion comes along it means traveling for most of us. Still we do it when time allows. Family is important.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
Pistachio Day celebrates the popular nut, which are native to the Middle East. The largest producer of pistachio nuts today is Iran but they are also grown in other areas, including California and Mediterranean Europe.
Pistachios are not just eaten as a snack, they are also used in cooking and their sweet flavor sometimes finds them used in desserts.
Studies have even suggested that eating moderate amounts of pistachios can help keep your heart healthy!
I found this easy recipe to make for St. Patrick’s Day which will soon be coming up in March. It uses pistachio pudding mix which is green.
ST. PATRICK'S DAY CAKE
1 pkg. white cake mix
4 eggs
1 c. vegetable oil
1 c. 7 Up
1 pkg. pistachio instant pudding mix, 3 3/4 oz. size
Combine ingredients in a large mixing bowl. Beat for 4 minutes. Pour into greased and floured 9 x 13 inch baking pan. Bake in 350 degree oven 30 to 35 minutes, cool.
FROSTING:
1 (3 3/4 oz.) pkg. pistachio instant pudding mix
1 1/2 c. milk
1 carton Cool Whip, 8 oz. size
Combine pudding mix and milk. Beat for 2 minutes. Fold in Cool Whip. Spread over cake. Chill until served.
