Music feeds our spirits and is our Universal Language. Universal Music Day creates awareness for the importance of Sound, Silence, Vibration, known as Music. Music surpasses all other means of teaching Listening and Communication Skills!

I appreciate and enjoy lots of different kinds of music from the classical to country and folk music and can’t imagine a world without it. Music can make mundane tasks a little easier and long days go by a little quicker. But did you know that melody and rhythm can improve our creativity, visual attention, and much more.
Some people listen to music for a boost on a tough day, while others might use music to keep them awake during a long car journey or to purge a negative feeling. They say that one way to improve your life is to add more music to it.
Our warm spell ended overnight and today will be much cooler. They say there is a slight chance of morning showers but the rest of the weekend is supposed to be nice only much cooler. Time to get the sweaters and jackets out.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
October 8th is Pierogi Day, a day to stock up your fridge with delicious dumplings made of unleavened dough. Usually stuffed with meat, potatoes, vegetables and fruit, pierogi have become popular in the United States and Canada due to large Polish immigrant population.
I’ve never made my own pierogi but this recipe for skillet cooked potato pierogis sound like they are nothing like the kind you get from the freezer section at the grocery store.
Potato Pierogi
4 1/2 cups flour
1 tsp. salt
1 pkg. 8 oz. Cream Cheese, divided
1 egg
1 cup warm water
1 1/4 lb. red potatoes,about 4, peeled, cooked, mashed and cooled
3 green onions, sliced
1/4 tsp. pepper
1/4 cup butter, divided
4 small shallots, minced, divided
1 cup Sour Cream
1/4 cup minced fresh chives
Mix flour and salt in large bowl until blended. Cube half the cream cheese; add to flour mixture, then cut with pastry blender or 2 knives until mixture resembles coarse crumbs. Add egg and warm water; mix until mixture forms ball. Place on lightly floured surface. Knead 5 min. or until dough is smooth and elastic; wrap in plastic wrap.
Mix remaining cream cheese, potatoes, onions and pepper until blended; set aside. Roll out dough on floured surface to 1/8 inch thickness; cut into 48 rounds, rerolling trimmings as necessary. Spoon 1 Tbsp. potato mixture onto center of each round. Brush water halfway around edge of each dough round; fold in half to enclose filling. Seal edges with fork.
Bring large saucepan of water to boil. Add pierogi, 12 at a time; cook 3 to 4 min. or until they float to the surface. Remove with slotted spoon; drain.
Melt 1 Tbsp. butter in large skillet. Add 1/4 of the shallots and 12 pierogi; cook and stir 4 min. or until pierogi are golden brown. Repeat, in batches, with remaining butter, shallots and pierogi. Mix sour cream and chives until blended. Serve with the pierogi.

I love pierogi. Haven't had some in years, but always delicious! I like to listen to music while I am cleaning house. We got rain and a thunderstorm this morning, a surprise awake to the day.

YAY for Universal Music Day!!! One of my new (to me) favorite quotes: "Music is what Feelings Sounds Like." I, too, like most genres. Well, except Rap, and I don't consider THAT music.
I never heard of pierogi until I met my Polish hubby. We've never tried making it from scratch. My fav is sauerkraut.
I'm a country music fan. Have been my entire life! I like the classics though. Not so much the modern day stuff. My adopted daughter Heather used to make potato dumplings. Loved them.
