Today is World Sight Day which is a global event that focuses on bringing attention on blindness and vision impairment. It is observed on the second Thursday of October each year.
This day was created by the World Health Organization in collaboration with the International Agency for the Prevention of Blindness and awareness is spread through a large number of different events.

Our sight is so important and one thing we shouldn’t take for granted. Those of us that wear glasses appreciate the fact that we can see better with them. Eye exams are important too. Your eye doctor does much more than just determine your prescription for eyeglasses or contact lenses. They will also check your eyes for common eye diseases, assess how your eyes work together as a team and evaluate your eyes as an indicator of your overall health.
Yesterday our temps bounced back up to the upper 70’s but today it’s to be back down in the 50’s. This up and down range in temperatures sometimes makes it difficult to know what to wear. Mostly I just try to layer with a sweater over a short sleeve shirt. Thankfully I do have plenty of sweaters. They say that tonight we’ll right around 38 degrees. BrrrrChill! I’ve put the flannel sheets on the bed and added a blanket. Layers are needed there too.
We have had some rain this morning, but thankfully it’s supposed to clear out. I’m hoping to get some grocery shopping done later on.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Yorkshire Pudding Day!
Yorkshire pudding is an iconic British pastry similar to a popover. The first recipes for the dish appeared in the 1700s. Yorkshire Pudding is made by combining flour, eggs, salt, milk, and pan drippings from prime rib or roast beef. The result is a light, doughy roll with a small well in the center that is usually filled with gravy.
While I’ve never made Yorkshire Pudding I did find a recipe to share today. It sounds delicious!
Prime Rib and Yorkshire Pudding
4 pounds prime rib of beef
salt and pepper, to taste
Yorkshire Pudding
1 cup flour
1 cup milk
1 dash salt
1 teaspoon canola oil
2 eggs
Preheat the oven to 425 degrees. Season the meat with salt and pepper and place on a rack on a baking pan. Roast in the oven for 25 minutes, reduce the temperature to 325 degrees F and continue roasting 50 minutes to one hour, or until the meat thermometer registers 150 degrees.
In a mixing bowl, combine the flour, milk, salt, oil and eggs, and beat until the batter is smooth. Let stand one hour while prime rib is cooking.
Spoon two tablespoons of the fat off the roasting pan and brush it in a 9 inch baking pan. Pour in the batter and bake in the oven for 30 to 35 minutes or until puffed and set. Serve immediately with the beef.

So true to rake care of our eyes, so many great things to see with them. It does sound like you are bouncing around a lot with the weather. I wonder if we will ever get down to 38 degrees here.

I cannot remember ever seeing anything clearly without a frame around it Pam! I started wearing eye glasses at a very young age. I have always said that if I had to lose one thing it would not be my sight. I would rather be deaf than blind. I had a PVD in my left eye last year and it has and will never be the same.
