Here at my house just about every light bulb has been changed to the energy efficient ones. With the shorter daylight hours we will be burning our lights more now than we did during the summer. Our time changes on November 6th as Daylight Savings time comes to and end and we’ll then be darker an hour earlier too. The long dark nights just make me want to hibernate.
Light makes such a difference. Light in our homes, and light in our souls too. Lights make us feel safe and protected. Not many of like to be in the dark. We need to let the light shine through. We not only need to see the light but be the light for others.
We had a cloudy day yesterday but I did get to see the sun peep through. Sunshine always brightens my day. Hopefully we’ll see a little more of it today. The colorful leaves shed a different light on a dark dreary day too and that is what is in the pictures today.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
October is National Seafood Month and Today is Fried Scallops Day
Oven Fried Scallops
1 pound scallops, cut into quarters
1/3 cup seasoned dried bread crumbs or seasoned crushed corn flakes
3 tablespoons low fat buttermilk
1/2 teaspoon ground thyme
Preheat oven to 500 degrees F. Spray baking sheet with nonstick spray and set aside.
In a medium mixing bowl, combine scallops and buttermilk, turning to coat. Let stand at room temperature for 15 minutes to marinate.
In small mixing bowl, combine the bread crumbs or corn flake crumbs and thyme. Dredge each scallop in crumb mixture, coating both sides.
Arrange scallops on baking sheet. Bake carefully turning scallops over until browned on all sides, about 5 minutes.
You can also pan fry scallops in hot butter in large skillet, saute scallops, turning frequently, until nicely browned all over, about 5 minutes.

That's such an interesting quote about the stained glass!
We're still guilty of using 'conventional' bulbs ... the energy efficient kind are SO ugly. Maybe they've changed? DH's daughter had those spiral-y, twisty ones in her house -- sticking up and out the top of the lamp shades. (I'm certainly no Martha Stewart, but that would drive me nuts!)
Definitely, I'm sharing this recipe with my son ... who ADORES scallops. (I developed a shell-fish allergy about 10 years ago, so that's a NO-go here.)
Never made scallops, but might have to try this one. We got a surprise rain shower this morning. I think we have been using the efficiency bulbs for a bit here. Hope its a restful day, Ma!
