Today is United Nations Day which recognizes the United Nation organization and all who serve and participate in this world organization. The United Nations is dedicated to world peace, and to the betterment of humanity through a wide range of program from world hunger to environment and health issues. Almost all of the more than 100 countries in the world are members of this organization.

I think we all want world peace and the betterment of humanity and I do applaud the efforts of the United Nations in all they do. Peace in this world seems an impossible thing at times, but we need to remember that peace begins with you and me. If we strive to have peace in our homes it becomes a way of life and when we give an example to others it ripples out into the world.
We are definitely going to have a cooler week ahead with highs ranging in the 50’s. We managed to have a mostly sunny day yesterday, but more than not the days ahead are going to be cloudy ones. Thankfully will still have the autumn color outside on the trees to brighten our days.
It’s the beginning of the SAD season for me. Seasonal Affective Disorder. I’m so affected by the lack of sunshine and daylight hours. I’m already taking longer naps during the day and going to bed earlier at night. Come winter I’ll be sleeping more than I’m awake. With so much to do here, napping should not be on my agenda at all, but SADly it is. I’m turning on the lights to try and make a difference and taking my vitamins too. Somehow I need to shake things up a bit.
I went through my album of pictures taken this year to find a few that were of peaceful memories made this year and that is what I’m sharing today.

It’s National Bologna Day!
National Bologna Day is a full of baloney!
Properly spelled Bologna, it is sometimes spelled "Baloney". It is pronounced like the latter spelling. Bologna is a sausage. It's commonly used as a luncheon meat. Mom and kids know it well.
When it comes to bologna, there definitely is variety. There is what you and I would call regular Bologna, German Bologna, Beef Bologna, Kosher Bologna, and more. Depending upon the kind of Bologna, it could include pork, beef, chicken, and spices.
It's easy to enjoy National Bologna Day . Have a Bologna sandwich. Try fried bologna. And, don't forget the mustard.
I found this recipe using Texas Toast to try out today.
Cleveland Fried Bologna Sandwich
2 thick slices bologna
2 tablespoons softened butter
2 thick slices Texas toast
2 tablespoons mayonnaise
1/2 cup mixed greens
2 tomato slices
Heat a large skillet over medium heat. Add the bologna and brown lightly on both sides. Remove.
Spread butter on one side of each slice of the bread. Put butter side down into the skillet and cook until golden and crisp. Remove.
Slather unbuttered sides of the bread with mayonnaise. Top bottom bread slice with bologna, greens, and tomato and other piece of bread. Serve.

I do miss the sun when it is not shining. We are having warmer days than normal. Kids still swam in the pool yesterday. I too am not fond with it getting darker earlier.

I am a lover of the SUN! It needs to shine on me every single day. But I do know how much we depend upon rain. So I guess I will have to be okay with rainy days too. I don't like it when it gets dark earlier. And I am not at all a fan of bologna! When I was a kid an old lady who babysat us called bologna "dog meat". Just left me with a lasting impression. Especially since she owned fat wiener dogs!!
