Today is Columbus Day which is a U.S. holiday that commemorates the landing of Christopher Columbus in the New World on October 12, 1492. He travelled with three ships: the Nina, the Pinta and the Santa Maria.
Most of our city and county offices will be closed today as well as state and federal offices, courts and most banks. As far as schools are concerned it seems to be a matter of choice. Some are open and some will close.

For years and years I would take this day off from work and go shopping with my daughter at our outlet mall. The Columbus Day sales are fantastic there. These days things have changed and I’ll be spending the day here at home as usual. It hasn’t taken much imagination at all to discover I have more than enough of everything.
After sorting through my season clothing, I’ve found that I have more than enough for now and don’t need anything new. I also have more than enough seasonal decorations, in fact there is way too much and some need to go. As far as home goods go, there is also more than enough and I have what is needed. I’ve also sorted through them and a lot will be donated. So there is no shopping going on, other than for groceries, most of the time.
In the 6 years since I’ve retired, I think the amount I had budgeted for groceries has more than doubled. I know I’m spending more and getting less. Thankfully I don’t eat out often and make my own meals. Over the weekend I make a cake, it was cool so it was good to turn the oven on. It’s more than enough for me too, so I’ll probably freeze half of it if I don’t find someone to share it with.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
National Angel Food Cake Day is a great day to bake a cake. Angel food cake is a sponge cake. It can be simple, or fancy. Today’s recipe is for a jello angel food cake.
Strawberry Angel Food Dessert
1 box angel food cake
3, 3 ounce, boxes strawberry jello
4 1/2cups water, boiling
1 pint fresh strawberries, cut in halves
1, 8 ounce, container Cool Whip thawed
Prepare angel food cake according to directions given on box. Once cooled completely, remove from pan and tear up into bite sized pieces. Place them into a 9 x 13' pan.
Dissolve jello in the boiling water, which should take about a minute. Put the jello in the fridge until it has a pudding like consistency. This should take about 1 hour to 1 1/2. Add the strawberries into the jello and pour over the cake pieces.
If you want, you can spread the Cool Whip over the top. Refrigerate at least 3 hours or until set.
Serve, and enjoy!

So true, Ma, about budgeting more and getting less food. Don't know how families do it these days. Schools will be closed today for Columbus Day, but also start of fall break.

The cake you made this past weekend looks delicious!! Angel food cake was my dear husband's favorite cake. His mother made him one for his birthday, every year. And iced it with burnt sugar icing, his favorite. Oh How I miss them both. Columbus Day used to be a fun school holiday!
