Today is Knife Day which is a day to appreciate the knives that folk use on a daily basis. The evolution of knives has been a remarkable feat, from knives made of bone, stone and flint, to modern creations using titanium, bronze, iron and steel.
Nobody can deny the knife is one of man’s most useful tools, for cooking, eating, fishing, hunting, and not to forget the oh so handy Swiss Army knife
It could be a good day to clean and sharpen your knives. Then again, there’s nothing like having a cake and enjoying a slice by the knife. And instead of wishing one another to have a nice day, why not just say: Have a knife day!

I must admit that most of my knives are not very sharp. I really like them that way as I tend to cut myself less that way. But I do have a few that are sharp and those come out of the drawer only when needed.
The pictures today are of our dinner at the park this past Sunday where we did enjoy a slice of cake as we celebrate DS#5’s belated birthday.
It was one of those beautiful summer days with cool breezes blowing.

It’s National Peach Pie Day!
I found this new to me recipe to share with you all today
Southern Fresh Peach Skillet Pie
Dough
1 cup flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons shortening
1/2 cup milk
Filling
6 fresh peaches, peeled and sliced
Topping
1/2 cup sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 tablespoons butter
For the dough: Sift the first 4 ingredients together. Then cut in the shortening with a pastry bender; add milk and stir to make a soft dough. Pat out dough 1/4 inch thick into 8 inch heavy iron skillet, allowing some of the dough to hang over edge. Place peaches on dough.
For the topping: Mix sugar, salt and cinnamon; sprinkle over peaches and dot with butter. Fold hanging dough toward center, leaving a little space uncovered. Bake at 425 degrees F for 25 minutes. Serve with ice cream.

The dinner at the park looked fun, glad the weather was pleasant too. We had a lot of knives, I thinned them down before we moved. I haven't missed any I gave away either, LOL.

My Dad is a big fan of knives! He has always given his grand sons Case knives. He is a country boy and he knows how useful they are. (Uh, knives, I mean but I suppose grandsons are too! LOL. ) Have a knife day! :-)
