For most of us, our lives seem to constantly be on the go. Our actions are often dictated by our to do lists and the things that we must get done. Doing things because we want to do them makes a whole lot of difference. When you take time to do the things you want to do, you will be more relaxed, happy and productive.
Because I love the changing seasons I’m starting to think about decorations for fall. August does remind me of sunflowers and I’ve decorated a bit here and there with those. Slowly but surely fall is coming and little by little the decor here will reflect just that but not yet…
I’ll be off to a birthday party today and will take some pictures to share later on. The theme is to be Star Wars.

WHAT’S NEW IN THE KITCHEN

It’s Banana Lovers Day!
I found this easy to make pound cake and pudding recipe featuring toasted pound cake and sliced bananas covered in a sugary, nutty mix and topped off with a big cloud of whipped cream.
Banana Nut Pound Cake Pudding
1 package frozen Pound Cake, thawed and toasted
4 eggs
2 cups half and half
1 tablespoon vanilla extract
1 1/3 cup brown sugar packed and divided
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1/4 cup unsalted butter softened
3 large bananas ripe and thinly sliced
1/2 cup candied pecans, optional
whipped topping, optional
Preheat oven to 325°F. Spray a round 2 quart baking dish with cooking spray.
Whisk eggs, half and half, vanilla, 1 cup of the brown sugar, cinnamon, nutmeg and salt in a large bowl until well blended.
Combine butter, remaining 1/3 cup brown sugar and pecans in a small bowl until combined.
Sprinkle 1/3 of the brown-sugar mixture on bottom of the prepared pan. Top with 1/2 of the toasted pound cake and banana; repeat layers.
Pour egg mixture evenly over the cake. Press down the cake cubes with the back of a spoon to cover; let stand 10 minutes. Sprinkle with remaining brown sugar mixture.
Cover the baking dish with foil. Bake 30 minutes. Remove cover and continue baking 30 minutes or until no liquid egg remains. Let cool for 10 minutes before serving. Garnish with whipped cream and a sprinkle of nutmeg, if desired.
This recipe reminds me of bread pudding but instead you use pound cake.

How fun with the birthday party! All the stores here have Halloween stuff already, so I guess it is time to think of fall decorating.

We don't do much decorating, but there's just something about sunflowers .....
Funny, I don't care for bananas, but I love them in prepared foods (pudding, cakes, etc.) This recipe looks easy and yummy!
I can't wait to see your starwars pics Pam! What fun! I love sunflowers, but haven't had much luck growing them up here in Chester. The ones we planted down South grew VERY tall, People stopped to look at them, they were so tall! I hope you have had a lovely weekend. I love banana pudding! xo
