The month of August starts off with a bang as we celebrate the first of many August birthdays in our family. I had the privilege to celebrate with this little granddaughter this past Saturday and that is what the pictures are of today. There were plans to celebrate outdoors at a park but storms moved in and everything was moved back to their house but that didn’t make the day any less of a celebration for sure !
The month of August is Admit You're Happy Month, Family Fun Month, National Catfish Month, National Eye Exam Month, National Golf Month, Peach Month, Water Quality Month, and National Picnic Month. Today is World Wide Web Day which is a global celebration dedicated to web browsing, the online activity that brings the world at your fingertips and a wealth of knowledge at your feet.
I do appreciate the WWW as it keeps me in touch with family and friends every day. It’s hard to imagine what life was like without it, but in the not too distant past the only way to communicate with my family was either by phone or by mail. I do still use the mail and the phone but not as often as I use the internet.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s Raspberry Creme Pie Day!
Raspberries are one of the gems of summer. Sweet and tasty for sure !
RASPBERRY CREAM PIE
1 baked pie shell
4 c. raspberries, divided
1 c. sugar
3 tbsp. cornstarch
2 tbsp. lemon juice
1, 3 oz. pkg. cream cheese, softened
1 tbsp. milk
Whipped cream, optional
Prepare, bake and cool pie crust. Place 1 cup berries and 2/3 cup water in a small saucepan. Simmer 5 minutes.

ombine sugar, cornstarch and 1/3 cup water in saucepan. Stir in raspberry liquid, cook over medium heat, stirring constantly until the mixture boils. Cook 1 minute.
Remove from heat, stir in lemon juice; cool. Combine cream cheese and milk. Spread evenly on bottom of pie shell. Pour remaining 3 cups of raspberries over cream cheese. Spread raspberry glaze over berries. Refrigerate several hours until firm. Garnish with whipped cream.
This is a fragile pie best made in the morning and served in afternoon. 8" pie makes 6 thick slices.
