Life is a Special Occasion!

Ride the Wind Day is a carefree day to soar above the earth. You can catch a ride with the breeze, or float along slowly like a gentle, late summer cloud.
Summer will soon be over. Catching the drift of this day is easy. Just relax, and let the wind carry you away in whatever direction it is blowing. Leave your troubles and worries behind for a spell, as you waft in the air.
Celebrate by watching birds soar through the sky or enjoy a picnic on a windy day, and watching the wind in the trees.
If you can't see the Bright Side, polish the dull side
THOUGHT FOR TODAY
The wind shows us how close to the edge we are.
Joan Didion
Well, thankfully the wind blew some cooler weather our way on Sunday. Yesterday was in the 70’s and we did need a break from the heat and humidity we’ve been having for sure!
As summer comes to an end, it is a blessing to be able take advantage of the last days with some cooler, summer breezes.
The pictures today are from a trip we took along the old Lincoln Highway where we happened to spy some windmills of the modern age. They call them wind farms.
Wishing the wind is always at your back !
I hope you all have a TERRIFIC Tuesday !
WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s Cuban Sandwich Day!
This is a day to celebrate the traditional pressed Cuban sandwich and its many variants, which have spread from Tampa, Florida’s Ybor City neighborhood to restaurant menus in all corners of the world.
The Cuban sandwich is a history lesson pressed between two pieces of bread. Perhaps no other food represents the United States’ history as a melting pot at the turn of the century better than the Cubano, which combines elements from three different immigrant groups that came together, surprisingly, in the deep south. Also, it’s delicious!
A traditional cuban sandwich consists of ham, mojo pork, Genoa salami, Swiss cheese, yellow mustard and dill pickle slices on crispy, but not too chewy Cuban bread, all heated in a press, though Cuban Sandwich Day celebrates all variations.
Mustard was a condiment and flavor preferred by the Germans. It also didn’t spoil in the Florida heat. That’s why there’s no mayonnaise on a traditional Cuban sandwich, refrigeration was scarce in tropical Tampa in the early 20th century.
In Cuban cooking, mojo applies to any sauce that is made with garlic, olive oil, and a citrus juice, traditionally bitter orange juice. It is commonly used to marinate roast pork. Without oregano, the sauce is typically called 'mojito' To create the marinade for pork, the ingredients are bitter orange juice, garlic, oregano, and salt.
I cannot recall having had a Cuban sandwich before but it’s now on my bucket list. Sounds delicious !

Sounds delicious with the sandwich, I have seen them on menus, but never tried one myself. Glad to hear it cooled down a bit, it is doing the same here, actually a bit of a cool breeze last night.

We have a pretty good wind here today so I should be able to catch the wind and ride along. That sandwich sounds really good. Don't think I have ever seen a Cuban sandwich!!
