Today is National Senior Citizens Day which honors our elderly population. On this day, we are encouraged to recognize and show appreciation for the value and contribution of elderly people to home, family and society.
In his Presidential Proclamation, August 19, 1988, President Ronald Reagan said, For all they have achieved throughout life and for all they continue to accomplish, we owe older citizens our thanks and a heartfelt salute. We can best demonstrate our gratitude and esteem by making sure that our communities are good places in which to mature and grow older.
If you are a senior citizen, enjoy your day any way you desire. After all, this is your day! Make sure to take advantage of senior citizens specials and discounts. There's bound to be plenty offers today.

I’ve been a senior citizen for awhile now and have found that there are lots of discounts out there, but more than not, you have to ask as they don’t advertise them very well. One clerk I talked with said they were afraid to ask some people if they were eligible for this discount because some were offended that they were thought to be old. I’m old and don’t get bothered about it. In fact I’m thankful to be the age I am. Our young people don’t have an easy road ahead of them at all.
Life is short and the years roll by before we know it. Reflecting on all the changes I’ve seen in my lifetime makes me realize just how much we owe our thanks to those folks that made it all possible. Change is one thing that never stops. Every day is a new beginning and it’s up to each of us to decide what kind of day we’ll have.
We can’t stop the clock, but we can keep our spirits young with humor, gratitude, and creativity. I’m sharing one of my favorite senior citizen cartoons today. Maxine always makes me laugh.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Spumoni Day.
Spumoni is an Italian ice cream, originating in Naples, Italy. It was brought to America by immigrants in 1870. While it is enjoyed any day of the year, many people consider it a Christmas time dessert or treat.
Spumoni is made of layers of ice cream, candied fruits, cherries, and nuts. Pistachios are commonly used. Whipped cream is included in some recipes.
The very first time I got to eat Spumoni was at a true Italian Restaurant on my first date with my husband. We went to the circus and then to eat dinner at a Spaghetti House. I think he meant to impress me! I’ve loved Spumoni ever since and yes, we went back again and again to that restaurant on special occasions.
This recipe is not for ice cream but a delightful pudding for dessert.
Spumoni Pudding
1 box instant chocolate pudding, 3.9 oz, prepared
1 box instant pistachio pudding, 3.4 oz, prepared
16 oz jar maraschino cherries, divided
¼ cup sliced almonds
large chocolate bar
Extra Creamy Cool Whip, 8 oz tub
Gather glasses or bowls for pudding. This will make 6 to 10 servings. Prepare puddings following packet instructions. Usually it's something like 2 cups milk whisked with pudding and let set for 5 minutes.
Set aside 10 whole cherries, depending how many individual puddings you make.Wrap remainder of cherries in a paper towel for a few minutes to absorb excess liquid. Chop cherries. Chop chocolate bar.
Evenly layer ingredients in cups. Start with cherries at the bottom, then pistachio pudding, followed by almonds, cool whip, chocolate pudding, cool whip, chocolate bar crumbles and a cherry on top.
Keep in fridge until ready to serve.

What a cute story, Ma, about your and your husband's first date! I have not had spumoni ice cream in years, but I do enjoy it. I think it is neat with the discounts out there for senior citizens. Hubby takes advantage of those he can. Any saving is a good thing.

I love that Robert Browning quote! My kids used to loved getting a dish of spumoni when we ate out at our favorite Italian restaurant!. Happy Senior Citizens Day! I'm celebrating too!!

Spumoni was my mom's favorite. In fact, shortly before she passed I take much comfort remembering how delighted she was when we showed up at her care facility with a container of that deliciousness.
