Today is World Honey Bee Day, previously known as Honey Bee Awareness Day, which is an idea put together by beekeepers in the USA, who petitioned the USDA in 2009 for an official day to honor honey bees and beekeeping. Bee lovers everywhere decorate their gardens with lavender, borage and marjoram, the bee’s knees in pollinator lures. Because you’ve been as busy as a bee, you can sit back and count your blessings today!

You've probably heard the phrase 'busy bee' in the past. That certainly holds true when you think about how bees stay busy visiting plants and flowers in search of pollen. A bee can visit up to 5,000 flowers in a single day. If you think that's amazing, consider this: to make one pound of honey, a hive of bees must travel over 55,000 miles and visit two million flowers!
I could only wish to be as busy as a bee but even though there is always lots to do, I’m not very busy at all. Unlike the busy bees that never seem to rest, I work a little and rest a lot. I always say that I have all can do on any given day to keep myself on track and that is work enough.
I hope to get a cake made for tomorrow’s Sunday dinner but other than that I really don’t plan on doing much at all today.

Chocolate Pecan Pie Day
If you have a sweet tooth, is the perfect opportunity to indulge. You needn’t feel too guilty about grabbing a piece of pie, because pecans have all kinds of health benefits. They contain more valuable antioxidants than any other type of nut, plus plenty of fibre, minerals and vitamins.
One of the most popular ways to enjoy these buttery, crunchy nuts is to bake them in a pie, and adding chocolate makes it even more delicious. Go nuts and enjoy yourself!
Chocolate Pecan Pie
1 refrigerated pie crust, softened as directed on box
1 cup light corn syrup
1/2 cup sugar
1/4 cup butter or margarine, melted
1 teaspoon vanilla
3 eggs
1 cup semisweet chocolate chips, 6 oz
1 1/2 cups pecan halves plus
10 pecan halves
1/2 cup whipping cream, whipped
Heat oven to 325°F. Make pie crust as directed on box for One Crust Filled Pie using 9 inch glass pie plate.
In large bowl, beat corn syrup, sugar, butter, vanilla and eggs with electric mixer on medium speed until well blended. Reserve 2 tablespoons chocolate chips for topping. Stir in remaining chocolate chips and 1 1/2 cups pecans. Spread evenly in crust lined pan.
Bake 55 to 65 minutes or until deep golden brown and filling is set. Cool completely, about 1 hour.
Line cookie sheet with waxed paper. In small microwavable bowl, microwave reserved 2 tablespoons chocolate chips on Medium 1 to 1 1/2 minutes or until melted; stir. Dip each of 10 pecan halves in chocolate; place on lined cookie sheet. Refrigerate 15 to 20 minutes or until chocolate is set. Garnish pie with whipped cream and chocolate dipped pecans. Store in refrigerator.

The bees' daily statistics are amazing, aren't they?
My mother used to make the BEST pecan pie! It breaks my heart to have lost the recipe. 'Just recall it called for both kinds of Karo syrup and a cup of shredded coconut, too. Perhaps some things are best left in my memory.....
