19 DAYS UNTIL SUMMER

Life is a Special Occasion!

WELCOME JUNE !
The month of June is: Aquarium Month, Candy Month, Dairy Month, Fight the Filthy Fly Month, National Accordion Awareness Month, National Adopt a Cat Month, National Fresh Fruit and Vegetables Month, Rose Month, and Turkey Lovers Month
Today is Flip A Coin Day which is day when making decisions is as easy as flipping a coin. This tradition dates back to Julius Caesar. Caesar would take a coin and flip it to make decisions where the right choice was unclear. The correct answer was heads, which of course carried his image on the coin.
Celebrate today and flip a coin. Use this method of decision making for all decisions, and for everything you do today.
If you can't see the Bright Side, polish the dull side
THOUGHT FOR TODAY
It is the month of June,
The month of leaves and roses,
When pleasant sights salute the eyes
And pleasant scents the noses.
Nathaniel Parker Willis
It would be great if making decisions was as easy as flipping a coin. Truth be told there have been times in my life when I did resort to that. Making tough decisions isn’t an easy thing at all, but I have found that the big ones require lots and lots of prayer.
It looks like our weather is to be a little milder toward the end of this week. The temps in the upper 80’s will cool down somewhat to mid to upper 70’s. And that’s my kind of weather. I know these days will change as we go deeper into summer and then change again when fall comes, but for now I’ll just enjoy them as they come.
The rose bush here has been full of buds for a couple of weeks now and soon will burst out in flower, so that’s what I’ve put in my pictures today. Roses from past years. The wonderful thing is that they survived another winter and will bloom again.
I hope you all have a WONDERFUL Wednesday !
WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s Hazelnut Cake Day!
Hazelnuts, also called Filberts, are from the Hazel tree. They have a slightly sweet flavor that makes them ideal for use in baking. Hazelnuts are rich in Vitamin E, protein and fiber and believed to be one of the highest natural sources of antioxidants. So now you can have your cake and eat it too with Hazelnut Cake. It’s delicious and nutritious!
Hazelnut Cake
Cake
1/2 cup butter or margarine
2 packages, 2 1/2 oz each, hazelnuts
3 eggs
1 1/2 cups sugar
1 teaspoon vanilla
2 cups flour
2 1/4 teaspoons baking powder
1/4 teaspoon salt
Glaze1/2 cup whipping cream1 cup semisweet chocolate chips1/2 teaspoon vanilla
Heat oven to 350°F. Lightly grease bottom only of 10 inch springform pan with shortening or cooking spray. In 1 quart saucepan, melt butter over low heat; set aside to cool.
Reserve 8 whole nuts for garnish. In food processor or blender, process remaining nuts until ground, making about 1 1/3 cups. Reserve 1 tablespoon for garnish.
In large bowl, beat eggs, sugar and 1 teaspoon vanilla with electric mixer on medium speed 2 to 3 minutes or until thick and lemon colored, scraping bowl occasionally. On low speed, beat in flour, baking powder, salt and ground nuts, scraping bowl occasionally. Continue beating, gradually adding cooled, melted butter until well blended, scraping bowl occasionally. Spread batter evenly in pan.
Bake 35 to 45 minutes or until toothpick inserted in center comes out clean. Cool in pan 15 minutes. Remove side of pan; run long knife under cake to loosen from pan bottom. Place heatproof serving plate upside down over cake; turn plate and cake over. Remove pan bottom. Cover cake with cloth towel; cool completely, about 30 minutes.
In 2 quart saucepan, heat whipping cream just to boiling; remove from heat. Stir in chocolate chips until melted and smooth. Stir in 1/2 teaspoon vanilla. Spread glaze over top of cake, allowing some to run down side of cake. Sprinkle reserved ground nuts around top edge of cake; arrange reserved whole nuts over ground nuts.
Serves 16 depending on the size of your slices.
COUNTING MY GIFTS
Spring being a tough act to follow, God created June.

PRAYER FOR OUR TROOPS
Please pray for God's protection of
our troops and HIS wisdom for their
commanders.
Almighty and eternal God,
Protect our military
as they discharge their duties
with the shield of your strength,
may the power of your love
enable them to return home in safety
that with all who love them
they may ever praise you for your loving care.
AND bless our Police Officers, Firefighters
and Paramedics and EMT’s
We ask this through Christ our Lord.
Amen
GOD BLESS YOU ALL!
ADVICE FOR TODAY
It is believing in roses that one brings them to bloom.
A little smile, a word of cheer,
A bit of love from someone dear…
Love,
